what shall I do with cold roast beef?

We bought an over-sized joint at the weekend and have eaten it hot with roasted veg, cold with roasted veg and BBQ style with coleslaw. NOW what shall I do with it? I have a few potatoes, lentils, lots of different kinds of beans, chickpeas, broccoli, chillis, a swede, leeks, loads of onions, a green pepper, tomatoes (crushed and fresh), mushrooms... Lots of other stuff too! In an ideal world, I wouldn't eat the swede or leeks because I'm saving them for a fish pie! Ideas? My brain seems to have capsized!

Chop it up and make a semi shepherds pie/general bake type thing using the potatoes, onions etc?

Or chopped up and mixed with the beans, chillis and onions for a chilli of sorts?

thai beef salad tis georgeous have made it a couple of times with a similar recipe when I have leftover beef.

roast beef & onion sarnies with horseradish! & roast spuds to go with & a little gravy maybe . . . I'm making myself hungry now

Last night I used some of our left over roast beef in a stir fry, carrots, sugar snap peas and beef all cut up into match stick pieces stir fried with soy sauce. Serve with noodles or rice.

You could do a nice one with pepper, mushrooms and brocolli.
