Has anyone tried the Patak's curry sauces and are they nice? I was going to try the Balti - but would welcome recommendations or other makes (lloyd grossman?). Thanks

I love them I use lots of different ones for my curries - very yummy!

I'm not sure about Pataks, but I found one of the Loyd Grossman curry sauces very bland. Smalls lovely whilst it's cooking but practically no flavour when you come to eat it.

My children love the lemon & coriander one - entire chickens disappear when marinated in that.

PlumBumMum · 02/03/2009 17:16

I love pataks sauces, and have added spinach to the balti yum

DrTrillianAstra · 02/03/2009 17:17

Pataks are lovely, their curry pastes are even better, Jamie Oliver recommends them in his MoF book!

Lemontart · 02/03/2009 17:18

I use the pastes rather than the sauces. Cheaper and easier to adapt/vary. Also good if you are on a diet lol as you can control the fat content easier!

I use Patak's paste rather than the sauces (except for the Korma one which dd prefers) or any other brand from the Asian grocer (eg Fern's)

The Balti one is fine.

(I use less than they recommend on the label)

thanks - will give it a try tomorrow. I've heard that if you are going to buy a shop bought one - they are the best.

What do you add if you use the paste to get a sauce? Is it more of a marinade?

I use the Pataks paste all the time... the madras is gorgeous.

I fry onions and garlic, add meat, tinned toms, tom purée, a sachet of coconut and some lentils and a couple of tablespoons of paste.

another patacks paste fan... add to coconut milk with your meat / veggies.

theirs recipes on the back of the jar if it helps!

Bink · 02/03/2009 17:37

Oh, yes, I should be clear - the lemon & coriander is one of Patak's pastes (not a sauce). And yes, I use it as a marinade.

Ideas of what to add to sauce-ify the paste are on the label - one suggestion is just a can of tinned tomatoes, which works fantastically - just enough liquid & the flavours all combine so well.

Twims · 02/03/2009 17:40

Meant to say I use the paste.

I love Pataks pastes, the one I use most is the Korma one. I've never tried their sauces because the paste is so easy anyway. The reason I started using it is that the ingredients are the same sort of thing as I would use if I were cooking from scratch, whereas lots of the others not only taste foul but contain ingredients that you would never find in a household kitchen.

Mercy · 02/03/2009 17:51

I do similar to oggsdog - fry onions, then garlic, add paste and tinned or creamed toms.

I hadn't thought about using coconut milk tbh. I must also try the lemon and coriander one - would fish be ok with that?

Bink · 02/03/2009 19:07

I think fish would work with lemon & coriander, though perhaps not too delicate a fish - not lemon sole (as if you'd use that anyway!)

I really like geetas range which I get in Waitrose or Sainsburys.
