Celeriac

My neighbour at the allotments has given me 6 celeriacs. I've taken two home and left the rest in the ground until I need them. But what can I make with them? I vaguely remember making celeriac mash and possibly celeriac soup but that still leaves 4!
Does anyone have any ideas?

celeriac makes the most delicious silky soup imaginable, so make tons of that.

you can use it as the top of a casseroley thing - e.g. make a lamb and bean casserole and then near the end put some thinly peeled celeriac strands and grated cheese on the top. It forms a sort of gratin. Nom nom.

I can't really think of anything else. I'd just make it all into soup.

Heres one I like:

Ingredients
1 celeriac, peeled and cut into eight wedges
sunflower oil, to coat
knob of butter
salt and pepper
5 tbsp sweet marsala

  1. Preheat the oven to 180C
  2. Place the celeriac wedges into a bowl, coat with a little oil
  3. use the butter to grease an ovenproof dish, just big enough for the celeriac wedges.
  4. season with salt and freshly ground black pepper and pour over the marsala.
  5. Transfer to the oven and roast for about an hour, turning the wedges and basting every now and then, until browned all over and very soft. You might need to add a little water towards the end of the cooking time to stop them burning

Elizabeth David recipe:
Celeriac
Butter
Mustard
Vinegar
Salt & Pepper, chopped parsley

Peel then cut celeriac into julienne strips.
Put knob butter into frying pan, add celeriac, stir 10 mins till nearly soft, then add tsp mustard, dash vinegar and seasoning. cook few mins longer then sprinkle parsley and adjust seasoning to taste - you want the celeriac to still have a little bit of bite. Serve with meats.
Even visitors have eaten this with me.

celeriac boiled with potatoes and some garlic cloves and then all mashed together (including garlic) is delicous with braised beef in red wine (is it still wintery enough for that??)

Roast it with other root veg to have with Sunday lunch. A mix of carrots, parsnips, potatoes, maybe squash and celeriac roasted in goose fat - mmmmm!

Save one, or half, for remoulade - the French classic.

Grate raw, peeled celeriac (on the big holes) and mix with mayo, salt n pepper, and a whiff of your fave type of mustard.

Like the subtlest, classiest coleslaw you can imagine. DIVINE with cold meat ans a jacket spud.

I've not tried the celeriac coleslaw - sounds good. I grow celeriac, it was a good year for them last yr, no wonder op was given 6.

I LOVE celeriac - if you cut it into thin slices, chopped up a bit and blanch a little, then dress with 2/3 natural yoghurt, 1/3 mayo - then chop some of the tender young leaves into the salad dressing...

Also have a celeriac and stilton souffle which is fantastic (but recipe is at home...)

Also very nice mixed with carrot instead of cabbage in a basic coleslaw.

You can also do a half potato half celeriac gratin dauphinois. Mmmmmm
