Dairy free carrot cake recipe

PLease can anyone help. My ds has decided that he would like carrot cakes, but is intolerant/allergic to lactose (so no dairy). Does anyone have a recipe for this?

I haven't got a specific recipe for this, but you could find a "standard" recipe and replace the butter/margarine with a dairy free spread (these are readily available). I got a dairy free spread from M&S (about £1 for 500g so quite reasonable) and it works fine in cake recipes ime.

You could us the same type of spread to make a buttercream style topping if you would normally use a cream cheese type icing.

I always do the Delia one without the topping. It's yummy and foolproof, works even when DS2 "helps".

The one I do is similar too jooseyfruit's link but I add dried cranberries and crushed Brazil nuts too. Instead of the usual creamy-type toppings I mix some icing sugar with lemon juice and drizzle it liberally (but definitely not to a layer) over the top.

It's delicious, even if I do say so myself. I can check the quantities if you like.

Hmmm, just went and checked my recipe, it urns out the main similarity to jooseyfruit's link was the SF oil and I make the icing with orange juice, not lemon (it's been tooo long)

It is still delicious and dairy free though!

Ladies thank you for your help. Ds found a recipe in our muffin cook book, that we have messed with - used water instead of milk. They have been cooked and are cooling in the kitchen. When we get back from school later I will make some normal icing and let him ice some.
