large pot of natural yogurt . . . what to do with it?

It's use by date is Tuesday but don't really want to waste it as I mis-read a recipe & didn't actually need it when I got it

Is there something I could do with it, either to go with tonights curry? Or some kind of cake? Or anything freezable that will keep so I don't end up chucking it

For the curry - mix some of it with some mint (it can be a tiny bit of mint sauce if you have no fresh), salt and pepper, perhaps a spoonful of mango chutney.

For pudding -

pour the yoghurt into a shallow dish and cover all over with brown sugar. Leave it until tonight when it will have turned all yummy and caramel-ish. Serve with baked plums, or apples.

really, mint sauce? I've got some of that in the cupboard so will try that tonight

& pud sounds a good idea, not had baked apples since we were kids ourselves, my mum used to do them all the time!

Add a clove of Garlic, and chopped cucumber, use as dip with chips, pita bread, vege sticks. Or add to souvlaki.

Definately good with curry to, if you don't want to add mint sauce just use straight.

Yes it's v good with garlic and cucumber to make tsatsiki but you might want to drain it in muslin to thicken it up a bit in that case. Unless it's the wonderful Total greek yoghurt, which doesn't need it.

Sorry: of course it's lamb not pork. Am veggie so they sort of fade into one. Dp and dd2 love them but we've never made them at home. They had them for lunch nearly every day when we were in Greece last year.

If you've got a bit of yoghurt left you can make a Greek cheese dip: mash some feta cheese and thin it a bit with the yoghurt. Add pepper and some finely chopped green chilli. Delicious with warm pitta bread or with carrot sticks etc.

Sounds good janeite, thanks, the lo would probably enjoy that as well since she loves dunking things in various sauces
& carrotts are one of her fave things at the minute

I'll be getting my book out in a while to write all of this down for future reference
