Please share a good freezable pasta sauce

Preferably vegetarian (though I occasionally cook meat or fish for Mr Lawks and the Lawklings).

Anything with hidden veg a bonus as dd1 is going through a very picky phase.

I've just come into posession of a freezer for the first time, and it's a biggun! I would like to batch cook and freeze some pasta sauces to use when I've not got time to cook. I'm a bit of a novice at this though. Any tips appreciated.

I make tomato and marscapone which freezes well. It is so easy - just warm up a jar of passata (the garlic and herb one is nice) and melt in a whole tub of marscapone.
I freeze it as it is and then when I reheat I add whatever bits I have lying around. Chopped bacon is nice, as are mushrooms, peppers etc. A bit of chilli works well too.
One jar of passata and one tub of marscapone mmakes enough for 2 adults and 2 littlies ffor about 3 meals.

1 large onion
1 large or 2 small carrots and/or
1 medium leek and/or
1 or 2 sticks celery and/or
200g/.5lb mushrooms
Clove garlic
1 medium red chilli (optional) - the ones that about 2-3in long, not the bird's eye ones
Two 450g/1lb tins chopped plum tomatoes
Salt and pepper to taste
Pinch sugar
Small bunch fresh basil
1 tbsp of your preference of oil for frying

Finely chop all the veg - I use a food processor to get it properly fine so fussy ds can't see 'bits'.

Fry this mirepoix in the oil until translucent, than add the tomatoes and the pinch of sugar. Simmer until reduced slightly, season to taste, add chopped basil (provided green bits are acceptable, otherwise leave out) and cook for another 10 mins.

Serve as is or freeze in ice cube trays so you can defrost small amounts for dc's lunch.

No reason why you couldn't freeze homemade pesto - I'd hesitate to freeze shopbought stuff though as I don't know what's been done to it already

I've often frozen pesto (the fresher tub kind not the kind in a jar). It's fine.

A tin of chopped tomatoes, splash of balsamic vinegar and soy sauce, chopped onion (fried before the rest is added) and then any veg you fancy adding in (we often put mushrooms, peppers and celery in). Bring it to the boil them simmer for 10-15 mins. It's based on a BBC Good Food website recipe called Frankie's Pasta Bake. I make double the quantity then freeze half. Defrost it, cook pasta, add veggie hot dogs in for the last few minutes then mix the sauce in.

Am jealous of your freezer-have a tiny one attached to the fridge and my biggest dream is being able to cook in batches and freeze large quanities of meals!!
