can i make a pasta bake using ricotta cheese?

and if so, how?! have hardly any food and a tub of ricotta that is about to go off.

if a bake is a no-no, any other ideas?

Yes I often do.

An easy pasta bake is spinach, ricotta and sundried toms with mozarella on top.

I wouldn't try to bake it with ricotta in. You'd be better cooking your pasta and veg/meat seperately then stirring in some ricotta, herbs, garlic and parmasan and possibly creme fraiche if you have it.

sounds good, i have all but mozeralla (bit of parmesan though). do you just cook pasta, mix with everything and bung in the oven? sorry, am not versed in the way of the bake...

You don't need to bake it, and without cheese on top it might dry out quickly.

I'd suggest frying an onion, add sundried toms and then the spinach for 30 seconds or so, then add the pasta and ricotta and mix.
