Potatoes - So how do your cook yours (i.e. mash, chips, jackets etc.)?

I only every do

Chips
Mash
Roasts (with a roast dinner)
Jackets
Plain boiled new potatoes in summer.

But I am bored...want to try something new...idea's needed

Potato cakes are real comfort food...plus really cheap as you need very little mash for the whole family (I find 2 potatoes does us 4 easily...sometimes with some left over)

Make nice buttery mash then mix in self raising flour until you have a thick doughy consistency.

Either break off and hand form into patties I often make my own "smiley faces" this way, or flour a board, roll out and use cookie cutters in whatever shape you like.

They can then either be grilled either side, I have used the George Foreman griddle and I have done them in the actual George Forman itself (although obviously they come out flatter) basically cook until golden! I also did them in the oven with fish fingers at 220 the other day which seemed to work OK.

I also make batches, part cook them, cool & freeze...they can then be defrosted and cooked so you dont have to do them from scratch every time. I guess you could add cheese/chives etc but to be honest we love the basic mix so much we just stick with that!

Another favourite is to do a jacket potato but brush with garlic olive oil & sprinkle with salt before putting in the oven.

baby potatoes - I just chuck them in oven dish and pour oven balsamic vinegar (enough to coat) and stick in oven for 45 mins. I season them and add something like rosemary too.

They taste lovely (not vingery if you were wondering).
