Turnip toddler challenge!

My veg box this week has FOUR turnips in it - no, not nice Neeps (aka swedes) but the white, bitter turnips.

I have an 18mo DS, and a veggie DH and like to make life simple by cooking the same meal for all of us.

What am I going to be able to do with my turnips?! (apart from make them into doorstops). Does anyone know of any nice recipes that can include turnips?

I'm going to try losing one of the turnips in my Cranks vegetable crumble... any other suggestions?

sorry no idea apart from using some mixed with potatoes to do mash with some veggie sausages?

try mashing with potatoes (could mix in carrots too, for extra taste)

do you have a slow cooker? could chuck in a casserole along with potatoes. carrots, parsnips etc and do nice thick tasty grvy as well?

I'll try the mash idea tomorrow night - was actually going to do veggie sausages for DH then anyway. I'll use another in the veg crumble this weekend - so if I've still any turnips left I'll chuck them in a slow cooker stew next week and hope for the best!

I have a recipe somewhere (will try and find it if you're vaguely interested!) which was something like pan frying them with wholegrain mustard and gin. I seem to remember it was very nice, although I haven't cooked it for ages.

chop into little square cubes and fry in olive oil. simple but delicious (was taught this recipe when I was au pair in France).
You can add chopped cubes of carrots too and this will sweeten mixture

here is a recipe my family love they dont know what they are eating!
I don't bother with the topping as i ww and divide the cake into 20 pieces at 3 points each!
You could also use carrots or possibly turnips you have nothing to lose and every thing to gain. give it a go

Parsnip cake

150mlsunflower oil
100gm soft light brown sugar
2 medium eggs
75gm golden syrup
175g wholemeal flour
1tsp ground cinnamon
1tsp ground nutmeg
1tsp bicabonate of soda
200g parsnips
75gms sultanas

Method

heat oven to 150
oil and line a loaf tin
mix together oil,sugar,eggs,and golden syrup until combined.
mix in flour,cinnamon,nutmeg,bi-carb soda,grated parsnip,sultanas,
pour into tin
bake for 1hr 50mins
leave to cool

topping

2tsp lime marmalade
200gms low fat soft cheese
30gms icing sugar

warm the marmalade until melted.
beat into the soft cheese with the icing sugar
place in the fridge to cool
when cold spread over cold cake.

BecauseImWorthIt - that sounds like weird combination! However will have to pass on it - really can't be getting DS onto gin at 18mo .

Kidsrus - I'm lousy at baking, not sure I'd hazard the other nice ingredients (and my baking skills!) with turnip, in case it was disgusting. With parsnip it sounds lovely - i might even risk giving it a go sometime. Last time I cooked a cake it didn't exactly work...

FeelingLucky - Really? Just chop and fry? I'll give this a go. I don't think DS will eat it though, he turns his nose up at carrots unless incorporated into unidentifiable mush. But it's worth a try if it's this easy to do something with a turnip!

Make soup with it. Add carrots leeks some lentils and stock and it will be lovely.

Fry crushed garlic in butter, add cubed turnips and cover in double cream and some black pepper.

Really delicious and lovely with pasta!

root veg mash using any or all of swede, carrot, turnip, butternut squash, or parsnip is a cracking accompaniment

to make it a bit more interesting, once cooked and mashed, in a frying pan melt some unsalted butter and add a clove or two of garlic plus either some finely chopped fresh sage or rosemary, and/or thyme. Lemon thyme is also good. Fry the herbs gently in the butter until the butter starts to brown slightly, take the garlic out and then stir the butter into the mash. You can do this ahead of serving time and keep the mash warm in a foil covered dish over a pan of gently simmering water - does it no harm at all and it'll happily sit there for an hour while you get everything else sorted.
