Urgent question about homemade bread!

I've made some bread rolls and they've risen and are ready to be baked. Do I have to bake them now, or can I leave them unbaked for a while (and if so, how long can I leave them for? In the fridge or out?) I just ask because there are loads there and I only need a few now, and as freshly-baked bread is far nicer than reheated bread, I wondered if I could leave half of them to be baked tomorrow. Thanks in advance, bakers!

Please do not put them in the fridge - not good for the yeast. I have never left dough for very long - how long were you thinking? hours, days? They can go a bit crusty on top if you are not careful. I would put greased cling film on top (greased bit facing dough obviously!). I have certainly left dough like this for several hours, it just rises more.

Of course you could bake them, then when ready splash water on them and reheat in oven when you want them, but you are right, they are always best freshly baked - yummmmmmm!

If they are ready to be baked and you leave them, they will rise too much and will collapse when you do bake them. I would bake them all now, use what you need and freeze the rest. If you freeze them as soon as they are cool, they will still be nice.
