Anyone make their own pitta bread?

I make bread, naan, crumpets and suchlike but have never made pitta - anyone got a good recipe? Or tips?

I always make ours now, would find it really hard to go back to shop-bought.

Delia's recipe didn't work for me but I use one out of my breadmaker book:

350g strong white flour
210ml water
1 tsp yeast
1.5 tsp salt
1 tsp sugar
1 tbsp olive oil

I use the dough programme on my machine.

Preheat oven to 230C. Split dough into 6 (we like big ones!) and roll out into pitta shape. Place on pre-heated baking sheet and bake for around 5 mins in my oven, although it has a mind of its own... Basically, take out after they've risen, just before they start to brown.

Then immediatly wrap them in tea towels ( 3 per towel) folded right around to cool as this stops them going hard.

Thanks - I don't have a bread machine but am sure I could do that by hand. Am looking forward to homemade naan.

Ours never stay around for long enough to freeze...so not sure!

Do they puff up so you can cut them in half and fill them with things?

Yes, they're great as they stay puffed up after you take them out of the oven so you don't have to do the careful knife wiggling thing that you do with shop-bought ones.
