I have some to cook for Sunday Dinner tomorrow. Can I just roast them in much the same way I would a leg, or do they need special attention?

Long and slow/ low is best. The meat just falls off the bone then. Yum!

No not really.

Only I would braise rather than roast.

have done this recipe a few times.

You can alter the veg to what you have got in or like.

I tend to bung on the hob with onion and red wine and herbs and cook for 2-3 hours

I did some the other weekend.

Use a knife to cut up the bone to make a hole iyswim and stuff it with herby butter (just mix some butter and rosemary). Then get a huge bit of tinfoil and fold it in half (to make it stronger). Chop veg (I used onion, leek, carrot) and chuck it on the tinfoil, stand the shank on top (do one bit of tinfoil with veg for each shank), pull the tinfoil up the sides, stick a slug of white wine in each parcel then scrumple the tinfoil closed so the shank is totally covered iyswim. Cook in the oven for about 2.5hrs.

Was yummy!

Slow cooker, red wine, rosemary, some veg -maybe onion/shallots, carrot, mushrooms. Tin of tomatoes or bit of tomato puree if you fancy it. Cook for hours, yum .
