We were originally going out to an Indian restaurant for a meal with my mum and a friend, but because of the DCs I thought it would be easier for them to come here [fool]. The only curry I have made is boil the rice, fry the chicken and stir in the sauce! Can anybody give me somne guidance please? My mum is apparently getting some spices tomorrow (no idea what yet) so I guess I will need to tell her. I only really like Tikka, so nothing too hot! Thankyou so much

sorry i put the kids to sleep last night and then fell asleep, if she goes to slough there are several shops and im sure whichever she goes to will have all you need

tandoori chicken (either with breast meat cut up of chicken legs and thighs)

rub chicken with spices (or if you are a bit squeamish put in freezer bag and shake)

2 tsp tandoori masalla
1 tsp cumin powder (zeera/jeera powder)
1 tsp anardana powder
1 or 2 tsp salt (boneless chicken needs less than boned)

You can increase marinade in ratio, should be enough to coat chicken in red but not lots left loose. Marinade for up to an hour before cooking, then remove from fridge and add half a tub of yoghurt which you have whisked (these come 3 or four tubs fora pound arewhite with black writing in slough shops if you cant get these add a squirt of lemon juice to creamy yoghurt) leave a room temp then stick in oven until chicken cooked
for lots of boned pieces and hour for boneless 20 min-ish

serve with raita
smooth creamy yoghurt (from supermarket or if you have above yoghurt left over add some milk and whisk) with grated or very finely chopped white onion, chpped coriander leaves, and finely chopped cucumber

in fact just leave raita on table in case anything too spicy for anybody

i dont really recommend natco spices, they are ok but not the best they just had good online guide

personally i would do chicken legs for starter and boneless chicken in the curry as easier to eat

i would really recommend this posted recipe for butter chicken, i was going to retype but the link has stap by step picture JUST DONT ADD FOOD COLOUR AT THE END, btw i did not post the recipe but it is very good and used by plenty

would you like a dahl recipe?
and are you ok cooking rice, perhaps buy some fresh naan from the slough shop and just tick in oven for 5 min to heat?

littleducks · 15/02/2009 09:00

oh and i didnt use nuts or fenugeek powder as with the anadarna powder it is a nice extra but not essential

dizzydixies · 15/02/2009 19:12

how did you get on?

littleducks · 15/02/2009 19:54

bump as am sure you are on the xenia thread LoW

Really great curry recipe here complete with step by step instruction video. Bit of a faff making the paste, but not difficult to do and really lovely. Just cut the chilli down a bit if you want it less spicy (although I'm much more of a tikka masala type of girl and its ok for me)

The easiest (and quickest) pudding ever - put 2/3 tblsp marmalade/jam/golden syrup/fruit/whatever into the bottom of a 1.5 pint pudding pasin/big plastic jug. Blitz 2x eggs with 120g sugar, 120g butter and 120g S/R flour. Plonk this on top of the marmalade/fruit/whatever. Cover with cling film and microwave for 5mins and 49 seconds. Awesome sponge pudding - easy peasy. Immediate success!
