How can i make a piefrom leftover roastchicken?

I roasted a chickenand inspired from threadson herewant to make itlast so how can i make a pie, can i justput pastryontop? or mall ones ilike higgidy brand pies

I make a short crust pastry (8 oz flour 4 oz butter, teeny bit water). Leave settle in fridge for half an hour.

Soften leeks in butter.
Make a fairly thick white sauce.
Combine chicken, leeks and sauce.

Roll out pastry into as large a rectangle as poss. Shove chicken mixture into centre, in a line (iyswim)

Fold in ends of pastry then sides. Brush over with egg or milk. Prick with a fork a bit over the top.

Bake in oven 35 minutes at 220C

I do similar for all sorts of fillings - we call it fold up pie.

I tend to do just a pie lid. So I break the chicken up into bite size(ish) pieces and put them in the pie dish then I add the other ingredients (you could fry the leeks off in some butter and put them in) then I add a tin of condensed chicken soup to add liquid and stop the chicken getting too dry.

Basic pastry lid on the top and then into the oven for about 30-40 minutes on a medium heat.

Easy peasy! Tinned sweetcorn works well with chicken and I often just chuck whatevers left in the fridge in there too! Adds to the excitement.

I make a chicken and leek pie from leftover roast chicken.

Fry the chicken and leeks together. Add some chopped ham if you have some. Add any gravy left from the roast. If not use a chicken stock cube to make some stock. Add that to the pan. Simmer for a while.

Place the contents of the pan into a pie dish. (I use a small roasting tin.) Cover with pastry. Brush with milk, then bake for 30-40 mins in a hot oven. Yum.

Peas also good - you can just bung in a few frozen peas as they are.

agree with all of the above.. I tend to only do a pie top too.. I use puff pastry and tuck the pastry in at the sides like a duvet

i do mine with leeks, carrots, celery, sometimes onion and if i can get it tarragon
slice and sweat the veg, at the chicken meat, and gravy leftover or stock you have made. thicken with a little cornflour if needed, add a dollop of creme fraiche. pastry on top decorated with pastry chickens and eggs made by the dcs. yum yum

I do

Fry a chopped onion, add mushrooms and frozen veg add tin of condensed mushroom soup and chicken then heat though.
Top with pastry.

I had this very thing tonight (am in Oz so far ahead of you).

Bought some fillo pastry, frozen spinach and feta cheese. Mixed the chicken, spinach and cheese in a bowl and dumped it in the middle of squares of fillo, folded it over, sealed it and brushed it on the top with egg, baked for about half an hour at 120'C.

I think it depends on how many carbs you want. If I were to do it as a lidded pie I'd need potatoes with it. With a fully encloded pie I just do veg on the side.
