every time i make leek and potato soups its taste ok but not yum like i have had before this time i have bought cream to add but i dont want to add it until its ready to be eaten?

am i missing anything else?

LEEKS, POTATOES, VEG STOCK, BLACK PEPPER, ONIONS, SALT , GARLIC?

THEN THE CREAM ANYTHING ELSE???

thanks chopstheduck, i just had a bowl with a drizzle of cream and it tasted yum so i am ok, fresh nutmeg? does that make much difference?

Or a bayleaf. And get the leeks good and soft - almost caramelised - before the rest goes in.

Butter! The best recipe I have ever used for leek and pot is:

chop leeks and pots quite small
put in the pan with big knob of butter and stir gently for 5-10mins without browning until leeks soft
add stock, simmer until spuds cooked through and mashy
blend
season
swirl a bit of full milk or cream through if you like it extra creamy

DON'T add onions, it makes the flavour too er, oniony. This way always comes out really glossy and smooth and really full of flavour. No garlic either, in mine.

I've been told chicken stock is better than veg (only for non-veggies of course)

i dont add onion neither, fresh nutmeg is the best. Goes really well with all veggies.

yes sweat the leeks in butter then a dollop of cream in the bowl.
Add butter fried croutons.
