Roast Pork - leftovers

I've got Jamie Olivers boneless roast pork shoulder cooking in the oven, and it smells to die for. However, I suspect I'll have some meat left over - any suggestions as to what to do with it?

Sarnies? This might sound stupid, but I don't think I've ever eaten cold roast pork. Which is stupid cos I know its sold in cold meats section of supermarket.

Whatever meat we have left over always goes for pack up (bar chicken for DH as he doesn't care for it in sandwiches).

Cold pork, jacket pots and coleslaw - I have it already planned for next Monday, after next Sunday's roast pork. Yum!

Have it with jacket potato, salad and apple sauce.

Add it to a chinese stir fry.

If you have good noodles,it's great shredded and added with some coriander, ginger, chillies and greens.Failing greens, a flat lettuce is just as good.

sandwiches usually win here, but also good for chinesey stuff - i often soak in a sweet soy saucey type concoction and it kinda caramelises in the pan. yum.

Is it the recipe cooked in tomato and red peppers?

When I did that one we had lots of pork left over and I made a pork goulash the next night using the pork and whizzed up what was left of the sauce and we had it with rice.

It was lovely.
