Quick - Celeriac!

Vegetable looks like a monster's head out of Dr Who.

But it was very cheap in LIDL and I am feeding 9 people!

Plan to boil, mash like potato - but how much of the bumpy bits do you have to peel/chop off, it seems to be getting smaller andsmaller!!

Just get rid of the nasty bits. DH made this last night and it was delicious.

You could add some potatoes as well to make a potato/celeriac mash. Make it go further and is sooo tasty.

I just cut off enough outer bumpy bits til I get to the white inner flesh. If you're feeding 9 and need to make it go further, you can mix it with some mashed potatoes. I usually chuck a couple of potatoes in the same pan and mash them all together. Be warned that celeriac is a bit more watery than potatoes so you must drain it very thoroughly before you mash.

no it will be fine if you want to serve everyone with celeriac - it just pads it out a bit.

Lots of people do roasts with boiled and roast potatoes.

I bought celeriac in Lidl this week too. Twas a silly price!

Oh I see... well if you're having roasties as well today, a small bit of mashed celeriac might not be so bad. I usually use celeriac in place of potatoes hence I will bulk it out a bit.

Hmmmmm I'm getting hungry. I'm very of you and your roast lunches. I'm at work and facing a dire canteen lunch

ahh yes lidl and silly priced celeriac..

I like to cut off the really alien bits.. and peel ( I do it with a pairing knife and peel in the way I would a potato).. cut into chunks.. and roast in a little olive oil and thyme.. until soft.. and then mash butter and seasoning.. you can also then mix with mashed spud to make it go further.

it makes a lovely base for a soup too

Cook it in with the potatoes, and mash together - about half and half.

When you peel and chop celeriac, keep it in cold water as it browns really easily.

Or you could make dauphinois with it - thinly slice and layer with finely diced onion or spring onion and garlic, season and pour cream over it and bake in the oven till soft
