Ideas please for veggie recipe using breadcrumbs?

freeze them, then they will keep for ages and you just need to take out as much as you need.

ideas for using them:

Melt butter in pan, add breadcrumbs and brown gently, use sprinkled over veg and stirred into pasta, gives a nice crunchy taste.

Use in bean burgers and veggie burgers

Use in a crumble topping on savoury veggie crumbles

Dip slices of hloumi cheese in egg and then the breadcrumbs and fry

Use as a crumble topping for sweet fruit crumbles

Just use straight from the freezer

I tend to keep them in a zip lock bag, and just take what I need out. If they've all frozen together in a clump I just give the bag a good hard bash against the kitchen table or counter to loosen them up!

Also, you could use them to make falafel, mixing with blended up chick peas.

If you add spices or sesame seeds and then coat vegetables, tofu, or mashed potato (crouquettes) and gently shallow fry that can be quite tasty too.

I usually sautee an onion and some garlic, and meanwhile boil or steam a variety of veg (mostly root veg) like potatoes, carrots, swede, sweet potato, broccoli, mushrooms (sauteed) cabbage, etc. etc. and then make a bachamel sauce or cheese sauce, mic the veg and the sauce, put it in a shallow dish, top with flour mixed with butter (plus breadcrumbs if using!) and oats too if you like, add grated parmesan or other grated cheese, salt and pepper, and if you want a nutty flavour sesame seeds or chopped nuts, pu tin the oven (200C) for about 30 minutes or until browned and bubbling.

Think cauliflower cheese with a twist!

Alternatively, make a tomato based vegetable sauce (like a veggie bolognese) with loads of veg cut up into it, add beans if you want (kidney beans are nice) and then top with the same crumble topping as described above.

It's not an exact science though, you can adapt the recipe as much as you want to suit your own preferences!

Thanks again Over. In the end I made pasta with garlic, broccoli and breadcrumbsas I had all the ingredients - I added the juice of a lemon. Only used half of the breadcrumbs so will definitely try your crumble.
