Hi all, I've currentlyu got a chicken defrosting in my fridge, I really fancy a roast chicken dinner tonight but as it's only me and my DS 17m for the next few days, i don't want to waste whats left. Help me with some easy meals for the next few nights please, DS quite a good eater but I'm not a good cook! Also, how do you get your roast chicken to be super tasty? Thanks?

You must be like me ,thinking about dinner at 7 in the morning!I do my roast chicken upside down for half an hour in a really hot oven, how ever will cause smoke, then turn over and turn down for remaining time, ends up really crispy. Sainsburys is advertising left over chicken recipe on the telly at the minute using ready made pastry squares, pesto, roast chicken leftovers and cherry tomatoes, make into parcel bung in oven. I will be trying this week!Happy eating.

7 in the morning is when I feel just about motivated enough...probably be tonight I will be knackered after work and we'll have chicken and chips . I'm determined though, and in this new era of thrift I don't want to waste stuff!

to make a chicken super tasty i mix some garlic salt with some butter and spread it on before wrapping it in foil and slowly cooking it.

Left over chicken? easy tomorrow put it in a pan with water and let it boil, use the water which will be a lovely stock to make a soup just add some veg and pearl barley.

if you get it just right you could have 2 days soup by just adding a tin chicken soup to the soup you made on the 2nd day to thicken it up.

My 2 most used ways of using up roast chicken are

  1. Chicken & veg mix.

1 onion chopped
left over chicken
a couple of handfulls of frozen veg
mushrooms sliced
1 tin of campbell condensed mushroom soup.
a little water/stock to thin.

fry onion for 5mins.
add mushroom soup and veg
when boiling turn down to a simmer add chicken
give about 30min on a low heat making sure it's heated through.

You either make into a pie/pasty or have on jacket potato. Or have with pasta or rice.

or

2 Stir fry chicken veg noodles or Rice

Add cooked chicken to a mixture of peppers/leek/courgette and stir fry adding chinese 5 spice and soy. Then add to noodles or Rice.

Don't forget you can make a stock from carcass (add onion,carrots and water simmer for 2hours.) Dran stock then add cooked chicken and veg and make a soup. You could also add pearl barley and make a thicker stew.

If you have to much chicken left over then you could freeze with some left over gravy and have another week. Just make sure that it's heated though.

A chicken does four days in this house. On Sunday we have a roast but just eat the breast meat, Monday night the children eat at the childminders so dh and I have a leg each with left over veg bubble and squeak, Tuesday night I use the bits of meat left on the carcass to make something depending how much is there (chicken risotto, or chicken with pasta and pesto, or put on a pizza, or if there is a lot I make chicken pie - Jamie Olivers Turkey pie is amazing but do with chicken). The last meal is soup made from the bones - but I usually bung the bones in the freezer and when I have about three I make a huge vat of stock.
