Will the left over potatoes that I boiled yesterday be OK tomorrow?

They have been in the fridge.

Meant to give them to the kids tonight but I've just found them and remembered!

depends on;

  1. whether they are also covered
  2. what you plan to do with them

If you haven't covered them, they will have dried out a bit and won't be very nice, but you could still use them if you fry/roast them.

If you want to give them as mash/boiled potatoes reheated, they will probably be a bit ick, but safety-wise they'll be fine.

Oh yes, definitely. My MIL once served us potatoes that had been left uncovered in the fridge for about 5 days. I can't say I ate them enthusiastically, but I didn't get food poisoning either.

One or two days in the fridge for veg or meat is fine.

Looks like fried or saute potatoes it is then! I'm sure we used to have that with corned beef and veg when I was little - or was that something else?

Or cut into cubes or wedges drizzle with olive oil and herbs and roast.

I have some too and they will be saute potatoes tomorrow. Sniff 'em! It's a scientific procedure that seems to work well.
