one pot meal for new mum

our village has a rota for providing new mum and partner with a meal in the first fortnight or so. fab idea from which I benefited, but now its my turn and I am totally out of ideas. I got three lasagnes so want to avoid that, otherwise it needs to be something that will happily reheat, one-pot would be ideal, and quick for me to make.
veggie or not - doesn't matter.

Our local church did this where we used to live (tis a great idea, they did it for me too). I had a chicken casserole, lasagne, chilli con carne, a Chinese veg stirfry (which was brought round hot and ready to eat!), a fish pie... can't remember the others I'm afraid. I think they coordinated by email so I didn't get the same thing twice.

I know you said no Lasagne - but Nigel Slater's Mushroom Lasagne is heavenly and completely different to a meat lasagne -they just share the same second word

A chicken casserole?

A frech style one - brown some chicken in a pot, put some white wine (or chicken stock but wine is better), then some carrots and new potatoes, not too much liquid, just to sort of cover most of it. Some garlic, some lemon juice, a bay leaf if you have one, simmer it with lid on for half an hour to 40 mins. Then put some creme fraiche to make a creamy sauce and a bit of mustard. Take the bay leaf out, obviously.

I second casseroles. I do mine with sausages, a tine of beans a tin of chopped toms and a splash of wocester sauce. Plonk it all in casserole dish and pop in the oven for thirty mins.
