Your best veggie lasagne recipes

DD1 has finally decided that she will eat veggie lasagne without complaining/dying. Normally I just do a load of peppers, onions, sweetcorn in a tomato sauce, then layer it with a cheese sauce. I like mushrooms in it but both girls think mushrooms are the work of the devil.

Is there anything else I could do as a change? No mushrooms, courgettes or aubergine though please!

Am thinking varieties maybe including: lentils / butternut squash/ red wine/ maybe green vege?

Why not try veggie mince or Quorn? I do this for the family as DH is veggie and the girls dont mind as long as there is plenty of cheese. Make it as you would a beef mince one with veggie stock, all the veggies, I also add broccoli florets or fine green beans, in fact any veg in the fridge and those who don't like just have to hoik the bits out!

I have also done the Delia Spinach and Ricotta with pinenuts which is lovely but can be dry so make sure there is plenty of sauce.

I don't like quorn as it seems to disagree with me, although dd does. She also loves broccoli.

Will google the Delia one: although I'd probably need to substitute the ricotta as none of us like it.

Thank you. is it just me or is "jar of sauce" a weird thing to put in a recipe?!

Any more for any more anybody please? I have a snow day tomorrow so will be able to pootle around in the kitchen - can't wait!

X-posts again, sorry. OK, no quorn, how about other veggie mince then, sometimes it can just take some getting used to due to the high fibre content!

OK, how about carrots then in the tom sauce, they can help 'sweeten' up the sauce and make it less sharp.

Another goodie that the girls love is all the veggies I have in the fridge, stirfried, make burritos out of them in a square baking dish, 6 or so in a row, put tomato sauce on top and cheese on the top, bake till crispy. Yum.

How about this

Lentil and vegetable lasagne- Serves 4

Preparation time less than 30 mins

Cooking time 30 mins to 1 hour

Ingredients
2 tbsp vegetable oil
1 large onion, chopped
2 cloves garlic
2 sticks celery, chopped
3 medium carrots, chopped
6 fresh tomatoes, skinned and chopped or 1 tin
250g/9oz brown lentils
1 tbsp tomato purée
1 bay leaf
sprig thyme
Sauce:
750ml/1½ pints milk
½ onion studded with bay leaf and cloves
sheets ready-made lasagne
55g/2oz butter
55g/2oz flour
100-150g/5oz grated cheese

Method

  1. Preheat oven to 190C/375F/Gas 5.
For the sauce, put the studded onion into a pan with milk. Bring to the boil and simmer for 5-10 minutes on low to flavour and infuse the milk. Set aside.
  1. Heat oil, add onion, garlic, celery, carrots and soften.
  2. To skin tomatoes, put tomatoes into a bowl and pour boiling water on top. Count a slow 10. Drain off hot water and put on cold water, they are now ready to skin.
  3. When vegetables are soft, add lentils, tomatoes, tomato purée and herbs. Add enough water just to cover and simmer for 20 minutes or until lentils are cooked (the mixture should be a little sloppy still).
  4. In another pan make sauce. Melt butter, add flour, cook for 1-2 minutes. Remove from the heat, add flavoured milk. Put back on the stove and stir until thickened and glossy. Season well, add grated cheese.
  5. Use a large ovenproof shallow dish. Put into the bottom some lentil mixture then pasta sheets, then sauce. Repeat finishing with the sauce.
  6. Bake in the oven for 20 minutes or until bubbling and brown.
  7. Serve with garlic bread and salad.

... or let them make their own. Big pot of stir fried veg, cheese, sauce, sour cream and tortillas and away they go !

That one sounds nice Minxie. Never seen brown lentils though, only red, green and puy. Any ideas?

BBFly - yep, they do their own fajitas, tortilla wraps, quesadillas etc a fair bit.

Brown lentils take a long time to cook and stay firmer, unless overcooked. They are def avilable from veggie stores online. Personally I'd replace with red as they are easier to get hold of but they mush!

Okay - I have got puy lentils bubbling away in port, tomatoes and vegetable stock and am roasting some vege in the oven - it smells great!

One final push for a butternut squash recipe?

How about roasting some veg - carrots, onion, garlic, peppers and squash. Then layer with passata, lasagne sheets and top off with the same sauce. I haven't tried it but I think it would work

I do a tom sauce (basic onion,herbs and toms chopped and puree)

And roasted veg (red & yellow pepper, courgette, leek and onion) mix with some freid mushroom usually brown or field mushroom as they have more flavour.

Then layer

tom sauce with some roast veg and mushroom mix.
layer pasta
cheese sauce repeat until dish fall finishing with cheese sauce top with extra cheese

then bake for 40mins.

Maybe cos it's flatter it picks up more sauce and more is always better
