Has anyone ever made their own pitta bread?

I found a Delia recipe online that uses a breadmaker for the dough. It seems easy enough. I am just wondering if it actually works! Is it as nice as the stuff you buy? We love pitta bread and live in an area where we can buy the proper stuff fresh from the oven as there are lebanese shops around. But it is expensive and not as convenient to have to go out and get them. So, I want to make my own,

Any experience anyone?

I have. It's easy and lovely and definitely miles better than supermarket ones. I use this recipe.

That recipe looks good, but what I liked about the Delia one is that I could do it in the breadmaker. I may give both a try though!

Ok, I tried it today. It worked well but only some puffed up. Leaving them in longer did not make a difference.

So, what makes them puff up and why did it only happen for some?

I don't know what puffs them up. My ones worked by magic. My recipe says it's the rolling and the very hot oven that does it and advises you to make it in a friend's house if your oven is not hot enough. Assuming you make friends on the basis of whether they have not ovens ...

lol! My first 3 puffed up really well. The others not so well. I am guessing that opening the oven in between for taking out and putting in lowered the temperateure of the oven. Next time I think I will allow time in between for the oven to get hot again.
