jar chickpeas

potatoes
broccoli
carrots
peppers green
cucumber
bag of salad
rice
pasta
spices etc.

Any ideas for a few meals would be appreciated. Thanks

Lentil and Chorizo Stew is lovely (if your lentils are puy lentils)

put chopped carrots, peppers, tin of tomatoes with a couple of handfuls of lentils and some slices or chunks of skinned chorizo and some veg stock, add some spices (depends what you have but I often add paprika, parsley and a little chilli) and boil up in a saucepan for 30mins ish to soften the lentils and until there isn't too much liquid if needs be add more liquid or add some flour if a bit too much liquid.

You could serve with, roast or baked potatoes and salad, or if you have got some nice chunky bread just have it with this.

very yummy, very easy

(i would also fry up some onions first but you don't have them on your list)

Thanks, I love chorizo and lentil stew. I haven't got onions but do have garlic.

I also have

Pasta with carbonara sauce - bacon, eggs and cream. Chop the bacon and fry it, maybe adding garlic, then add beaten egg and cream, and stir through in hot pan (but don't reheat too much). Serve with cooked pasta, grated Parmesan (or the Emmenthal might do) and a bit of fresh veg (e.g. broccoli) to go with it.

This serves approx two adults and a child:-

Lentil and red wine sauce

Fry a chopped onion and a clove of garlic
When soft, add 4oz lentils, a small can of chopped tomatoes and 10 floz water. Cook on a gentle heat for about 25 mins, covered, and stirring occasionally. Then add a large splosh of red wine, a squirt of tomato puree, a grind of black pepper, and a sprinkle of herbs (basil or oregano are quite good). Cook uncovered for a further 15 mins. Serve with pasta and grated parmesan.

Sorry about the not-very-exact measurement, e.g. splosh, but that's what I do!

I hope you enjoy it, if you decide to make it - it's what I always cook if I find I haven't planned for anything. Mainly because I practically always have those ingredients in.
