Ok, the usual, easy/quick/preparable lunch ideas for a toddler?

I know, there are always threads on this, but can you give me your tips on what you feed your toddler for lunch.

I need ideas that are either quick and easy, or stuff that I can prepare.

Usual lunch for DD (19mo) is omlette, or crackers and cheese and snacky bits, or leftovers. But she has been unwell this week and has barely eaten. I'm struggling for inspiration. She can be a fussy bugger and I am worried that she doesn't eat enough veg.

Any tips welcome!

I made up a pasta dish for DS. Chopped up a load of veg (peppers, courgette, mushrooms, onion) quite small, sauteed it and mixed with cooked pasta and topped with cheese.
Didn't take long, used up veg lurking in the fridge and DS liked it.
Soup? Make a batch and freeze portion sized amounts. Batch cook anything actually - pasta sauce, cauliflower cheese, stew etc etc.
Pizza muffins. Toasted muffin topped with tomato pureee, cheese and chopped veg.
Dips and bits of veg/breadsticks?

I manage to squeeze a few spring onions and peas into homemade fishcakes. Mix with cold mash and any fish, shape and refrigerate. Shallow fry and serve with a dollop of ketchup (that counts as a vegetable, right?)

Cream cheese & chopped dried apricot on sanwiches goes down very well.

Agree with Hensmum, we tend to batch book/store leftovers so DS eats more hot meals than we do as it is easier to get veg into him this way.

Thanks for the tips. If tomato ketchup counts then she's at least getting some veg! She's just age that stage where you don't know from one day to the next what she'll eat!

Yes they're a bit like cats aren't they? DS has just turned his nose up at chicken & butternut squash (having wolfed it down yesterday) and now I have 20 portions of the stuff in the freezer.....
