Please can you help me come up with 5 evening meals for a fussy vegetarian????

She doesn't like tomatoes in any form, cooked onions or courgettes....i'm sure there's more!

jacket potato with beans?
tortilla wrap, hummus and salad
pasta and pesto
lentil soup with bread and butter
quorn sausage, potato wedges, eggs
mushroom omelette and salad

Oh and my DH is a hardened carnivore who would rather eat lipstick than quiche or baked spuds. I am starting to sweat a the thought of producing anything that will keep the pair of them happy!

Anyway,

-chinese/stir fry with tofu

-cous cous with chickpeas or veg sausages

quorn sausage casserole and rice
baked potato with beans and cheese
stir fry veg and noodles
cheesey lentil bake, with brocolli and carrots
savoury almond cakes and veg
pesto pasta with veg in.

That's our last 5 days menu. The lentil bake does use chopped toms but they blend in so you can't tell that they are in there. And the almond cakes have grated onion in but very fine (again, can't tell they are in there).

We also do
nut roast with roast pots etc.
veggie tortillas (stir fry veg with guacamole, sour cream etc in a wrap),
veggie hot dog sausages with rice and sweetcorn,
feta cheese and spinach pie,
pasta with mushroom sauce
mushroom risotto
pizza (can make them without the tomato base, just veg and cheese)

Tiramissu - oh my goodness: my foibles are following me around!

Pasta with a melted cream cheese sauce and garlic mushrooms piled on top.

If she likes quorn, you can use it to make fajitas, perhaps with peppers and sweetcorn and then salad, soured cream etc.

Omelette with asparagus and parmesan with a lovely rocket salad.

Houmus, falafel, pittas, salad etc.

Thank you! I have many pet hates - tomatoes are simply one in a whole catalogue. Dawn French is the one that bothers me most!!

Stuffed peppers? Could stuff with cous cous, spices etc or with feta cheese and fried mushrooms or with feta and lemon juice etc.

risotto milanese (or with mushroom, or goats cheese and rocket)
cheese souffle (really not as hard as it sounds)
Garlic roasted flat mushroom sandwiched in french bread (think steak sarnie)

current faves that we all usually eat too

stir fry (he just has the veg or occassionallly quorn and we sometimes have cghicken)
shepherds pie/chilli/spag bol/lasagne (either judst veg or quorn mince)
butternut squash lasagne - yoyasaly lovely -even dh likes
fajitas
pasta and red pesto
falafel and pirtta

probably not very helpful, but the cookbook that saved my life was the 'cranks bible'. my favourite cookbook and i'm not even a vegetarian!

they have lovely things like a great lakhsa (sp?), cheese filo pastry things and all sorts.

teh best veggie meal i have foundf to suit carnivores is delia's spinach and ricottta lasagne - though not an every day meal IMO due to faff anf price

Two immediate burning questions - how to you make savoury almond cakes & a melted cream cheese sauce??

Cook garlic a bit, gently. Add a tub of garlic and herb boursin or Philly until it melts, splodge of milk to thin it and lots and lots of black pepper. I'd normally add onions but since they are not liked...Can add a bit of paprika or some chilli flakes too. Or even a slug of brandy, especially if having with mushrooms.

savoury almond cakes (recipe from my dMIL)

6 ozs of breadcrumbs
4 ozs of ground almonds
1 onion fairly large - white - Spanish or other
2-3 tablespoons of chopped parsley (or what is available)
1 teaspoon of mixed herbs (dried) or what you like.
1 egg - beaten
1 oz of butter - melted

Method

  1. make breadcrumbs any type of bread but I like brown / granary/ or mixture with white. Just what you have basically.
  2. mix in the almonds
  3. grate the onion
  4. add onion and chopped parsley to the mix
  5. add beaten egg and melted butter to make a mixture that you can shape, therefore not too wet.
  6. flour a plate and hands - 1 tablespoon of mix into hands and shape into a ball first, then flatten it a little into circles .
place on a flour dusted plate - keep hands floured - it is much easier then.
  1. you can then freeze them like this . Or just fry them. They only take a short time. Nicely browned on both sides.

OOoh lovely thank you very much for the recipes - they look fab and simple. DH had a ground almond shopping accident at christmas, so I have zillions of packets. I adore cream cheese and have never thought to use it in a sauce. The lentil shepherds pie looks fantastic too - i will do that when my onion phobic friend isn't here!!!
