I was trying out different recipes a few months ago and make some Ginger cakes but can't remember where I got the recipes from so am starting again and wondered if anyone who like to share their Ginger Cake recipes with me please? (pretty, pretty please)

(One of the ones I made tasted like the Jamaician Ginger Cake that you can buy in the shops. People have been asking me for the recipe but I cant find it again. It was so tasty and easy, I only do easy!)

Hello Mrs Weasley

I usually use Nigel Slater's recipe (he knows his food!)- there are two on that page and I've used both but can't quite remember which turned out better. I will modestly say that I have won prizes for my ginger cake at the local village show two years running and it was definitely one of the two cakes from this link (village small however and not many Delias in it.)

In my files I also found this recipe which looks very simple and is basically the same principle as all ginger cake recipes

Parkin/Ginger cake

8oz SR flour
2 tsp ground ginger
4 oz caster sugar
1 tsp bicarb
2 oz butter
4 oz golden syrup (I use 3 tbs golden s, 1 tbs black treacle)
1 egg
7 fl oz milk

Heat oven to 150C/300F

melt butter and syrup gently, add chopped stem ginger (my addition) and grated root ginger (likewise). Beat the egg into the milk. Sieve dry ingredients and pour in the butter/syrup mix. Beat in the egg and milk.

Bake one hour in square tin lined with greaseproof paper (cover with foil if browning too much and I found it is quite easy to overcook so check after 50 mins and KEEP oven at 150).

Keeps very well in foil - gets moister and stickier.)

Thank you all, you are lifesavers.
