Celeriac - what to do with it?

Have ended up with two celeriacs in this week's veg boxes.

Have only ever had it once befre at home.

What can I do with it?

I was at my parents' last weekend and my mum, who is a brilliant cook, served celeriac mash with a boeuf en daube. It was sensational. I've made celeriac souffle, which is also very nice, and I think you can make a gratin with it.

I peel and cut into wedges - put some oil on and make chips in the oven.

Grated with grated carrot and a light mayonnaise dressing.

Celeriac mash is lovley.

So I am asuming celeriac mash is just peel, boil and mash? That would work with most stuff we eat TBH.

Never thought of celeriac chips. Hmmm.

One of them came int he salad box so assuming I grate it raw with carrot, etc?

It's just one of those ingrediants I never think to buy so really feel unfamiliar with it.

Yum we had one in our veg box this week too. I put it in a lamb casserole with carrots and parsnips. I don't think my children realised they weren't eating potato as the texture is very similar. I have put it in a gratin with sliced potato before as well.

Yes, just boil, peel and mash. I think it's one of those veg that go from hard to overdone very quickly so you need to keep an eye on it.

And I've just remembered Loyd Grossman waxing lyrical on Masterchef about a celeriac rosti so that might be worth a try?

I've done a celeriac and salmon recipe before. Sort of like a dauphinoise potato but with equal layers of celeriac, potato and salmon.

Ok - serves 6

juice of 1 lemon
1 small celeriac
2 medium baking pots
2x 125 g packs of sliced smoked salmon (although I have done it with salmon fillets as well)
fresh dill
1 onion
284 ml double cream

Cut celeriac into slices about £1 coin thickness and toss in the lemon juice. Peel and thinly slice pots and toss with celeriac

Layer the cel, pot and salmon slices in large dish, sprinkling dill onion, cream and s&p over each layer. Finish with remaining cream

Cover dish with foil, place on baking tray and bake for 45 mins (on 200/Gas 6). Uncover and bake for 30-40 mins more until veg is tender and top is golden

It is really gorgeous (although hardly diet food )

Oooh, this thread reminded me that I have a celeriac sitting in the fridge (an impulse buy to try and force myself to think up something to do with it - am on a bit of a "seasonal veg" run at the mo).

Ok, this is what I did with it, and it is GORGEOUS (am sitting here munching as I type):

Peeled celeriac, cut in half, and sliced into 1/2 cm slices (moon-shaped).
Mixed a few tablespoons of course flour (the kind you'd make pasta or gnocchi with) with some mild paprika, salt and pepper.
Dipped each slice of celeriac into milk and then coated in flour.
Fried on medium heat in rapeseed oil (partly because it's supposedly so good for, but mainly because it tastes nice and gives such a gorgeous golden colour!!) for a few mins on each side, until lightly golden and celeriac just soft when pricked with fork.

I think it would taste fabulous with something like a lemon or lime mayonnaise. I'm just having normal mayo with it, and it's going down rather well!!!
