yoghurt trouble shooting

OK I have the Lakeland bulk yoghurt maker.
followed instructions to the letter.
2tbs fresh yoghurt (yeo valley)
900 ml UHT milk full fat
left it in the cellar, for slightly longer than 8 hrs
result=mildly yoghurt flavoured milk.

have put it on for another 8 hours- can yoghurt be overdone?

instructions didn't say to warm milk first- but cellar is quite cold?
could that be it?

and what can I do with a litre of slightly yoghurty milk?

I have another lite of UHT milk (but semi skimmed)- but no more yoghurt for a starter. Shouls I try a different starter yoghurt?

all suggestions welcome- am very dissappointed!

I had terrible trouble understanding your title! Thought that the yoghurt was shooting, or was having trouble, shooting, and then wondered why on earth yoghurt would be going out shooting, or be having trouble

Can't help you at all I'm afraid - my mum just used to make yoghurt in a thermos flask.

Oh yes, my yogurt maker uses gentle heat.
Silly question, but your starter was live wasn't it?

mistlethrush · 25/01/2009 14:10

Whenever I make yoghurt I use warm milk: does the yoghurt mker heat things up itself - if not, yes, you need to use warm milk! I've used semi skimmed before with no problem - Yeo valley should be fine - to thicken I've sometimes used some skimmed milk powder to add to the milk... If you 'over do it' it will go into solid and liquid - as its runny milk its not been done enough.

I've always has a problem when using yeo valley as a starter. I don't bother warming the milk if I use UHT, but i usually a few tbsps of milk powder to mixture.

thanks for this (have been sorting laundry)
milk was room temp (although house is cold)
nettie, what do you use? for a starter I mean?
we are now about 4 hrs into second attempt with same mixture.
I don't mind if it's a bit thin as I was going to strain it- but what I found this morning was completely runny!

If I forget to save some of the all batch I tend to use longley farm (from holland and Barrett) or Total Greek Yoghurt.

Did your second attempt work any better?

Have you tried straining it through a muslin or clean tea towel for a few hours I do this sometimes it makes it nice an creamy like greek yoghurt.

madlentileater · 26/01/2009 13:28

success!
I used yeo valley again, but 2 dsps rather than 2 tsps. Also, yogurt make was already warm.
Lovely mild set yoghurt- I have just strained it and now is very thick, about half the volume. I'll strain it for less time next time!
thanks all!

have just re read my OP- and am confused now!- have checked instructions- i used 2 TSPs (=10ml) not TBSPS (=30ml)
2nd attempt, used dsps, i guess trhey are about 20ml each.
