I am looking to expand my repertoire of vegan recipes - does anyone have any really good cake or biscuit recipes? Or links to websites? Thanks

I have borrowed Vegan cupcakes take over the world from the library and it is fab!

My little dd is allergic to egg and dairy so I have quite a few recipes - Hope these are useful

I know you can substitute apple sauce for eggs, so I imagine this would work:

YUMMY ALMOND MUFFINS

2 1/2 cups ground almonds
1/2 cup honey
1/4 cup butter
normally the recipe calls for 3 eggs, so I'd guess 3/4 cups apple sauce or egg substitute
huge dash cinnamon
big splash vanilla essence
1/8 tsp salt
1/2 tsp baking soda

Mix, bake at 365-375 F (depending on your oven) for 22-25 min (they should be golden brown)

I have a book that suggests substituting eggs with 50ml of cold custard made with custard powder and rice milk plus one tsp of baking powder per 110g flour in the recipe.

I made DS's birthday cake using one of the moulded lakeland tins and substituted the eggs in the recipe as above and it was very successful.

I didn't know about that - I know you can use banana, apple sauce and flax seed. Will try the custard powder next time

thanks for this thread - just found out my dd allergic to egg and she is three soon so i came here looking for a birthday cake recipe

so pleased to see there are some lovely options out there

custard powder would contain egg too i think?

has anyone tried using apple sauce?

You can also get an egg-replacement powder, which looks quite like custard powder, and sometimes I use that in cakes although I prefer to find recipes that dont need egg.

Our hospital gave me some of the powder but I have seen it in health food shops etc.

I often use apple sauce or banana as an egg replacer.

Do you need birthday cake recipes? DS's birthday cake was vegan and was the best cake I've made- and I bake a lot!

can you explain how to use bananas instead? is it one small banana, mashed, instead of one egg? so if recipe says 3 eggs, use 3 bananas?

Egg alternatives in Baking

Flax Seeds
1 Tbs flax seeds (whole) OR 2 ½ tbsp ground + 3 tbs water = one egg. Beat well.

Use in: pancakes, whole grain items, bran or corn muffins, oatmeal cookies

Silken Tofu
1/4 cup blended silken tofu = 1 egg. Whiz til completely smooth, add other wet ings.

Use in: Dense cakes, brownies, and in smaller quantites for lighter cakes and fluffy things (if the recipe calls for 3 eggs only use 2 "tofu" eggs").

Ener-G Egg Replacer
1 1/2 tablespoons + 2 tablespoons water mixed well = 1 egg

Use in: cookies, or things that are supposed to be a little crispy.

Bananas
1/2 ripe banana blended until smooth or mashed well= 1 egg.

Use in: Quick breads, muffins, cakes, pancakes

Soy yogurt :
1/4 cup soy yogurt = 1 egg.

Use in:: Quick breads, muffins, cakes

Applesauce:
1/4 cup of applesauce, canned pumpkin or squash, or pureed prunes are binders.

These give baked goods a heavier texture, so you may want to add an extra 1/2 tsp. of baking powder. They can also flavor the finished product, so use with caution
OR:
Mix together 1 tsp Baking Powder, 1/2 tsp Baking Soda, 2 Tbsp Flour, 3 Tbsp Water
2 tablespoons of cornstarch beaten with 2 tablespoons of water.

My recipe for chocolate cake is for cupcakes but you could do it in a cake tin instead. I just remember it is in cups though, so might not be any good to you:

Here it is anyway.

Makes 12

1 c milk
1 tsp vinegar (red wine// apple cider)
¾ c white sugar
1/3 c canola (or veg) oil
1 tsp vanilla
½ tsp almond/ chocolate extract or more vanilla
1 c flour
1/3 c cocoa
¾ tsp soda
½ tsp powder
¼ tsp salt

350

Whisk milk & vinegar, leave to curdle
Add sugar, oilm vanilla, beat til foamy
Sift dry stuff
Add in tow batches to wet til mixed
Pour ¾ into cups

Frost with white, peanut butter frosting, ganache, coconut

Or Add coffee powder or orange to the mix
