tuna & rice salad for birthday lunch

what would you put in it or how would you do it?

Also, as it's to accommodate a friend of mine who has a gluten free diet . . . does anyone know if I would have to buy gluten free rice, or is rice gluten free already?

tuna, grated carrots, sultanas, balsamic vinegar, roasted cashews.

You are welcome I'm watching your thread with interest, for some inspiration. I'm afraid my tuna and rice salad would just consist of sweetcorn, onion, tomato and celery! lol

A bit of grated ginger works well. Also:
chopped pepper
chopped spring onions
diced carrots
chopped olives
avocado and finely chopped celery
bit of parsley.
A little mayo, rice vinegar and a bit of soy sauce to taste. Poss bit of mirin if you have it - makes a v slightly Japanese-y rice salad...

I'm afraid you can't have soy sauce on a gluten free diet. Nor malt vinegar is you were thinking of using that. Mayo is ok though

I'm learning all sorts since asking about it the other night. Didn't know about soy sauce or malt vinegar. Is it just malt vinegar? would a small splash of balsamic maybe be ok?

It's starting to sound more interesting than I'd originally thought!

How about:

grated carrott
sweetcorn
spring onion
chopped pepper
tomato?

Do I cook the rice first? & how do I get it so that the rice doesn't stick together when its cooled? Do I rinse it & then let it cool before adding the other ingredients?

That sounds delicious. Yes, I would cook the rice first. When my rice has finished cooking I put it in a coulnder(sp?) then pour boiling water over it, that seems to make it fluffier and less sticky. I think it's Jamie Oliver then steams his rice for a bit, I'm going to give that a try when I next do rice.

Yes, it's just malt vinegar that contains gluten. It's actually the malt that is the problem.

Would this be of any help to you? Might give you some ideas. Hard boiled eggs, chopped, might be nice with your tuna salad.

Thanks for the info TimeForMe, much appreciated & I'm going to sit down with the recipe search you posted later on & write some of them down. I think some of them may make a nice evening meal for us, maybe with some fish or chicken

Just a couple of additions to the gluten free aspect - you can buy free from soy-sauce (I think in ASDA)certinaly in on of our local health food shops. Also, wine vinegar is OK (red or white, just not malt)

Also, yes, the Asda o have the free from soy sauce, I got mine from there,

Plus, if you were thinking of a nice dessert, the Nigella Lawson clementine cake is delicious and a real treat, just make sure you use gluten free baking powder.

In mine I put:
rice, tuna, sweetcorn, red peppers, thinely sliced cagbbage, celery, caper, olives, sometimes I also put cucomber and tomato but not if I prepare the salad on the previous day as those two can get soggy overnight. a simple dressing of white wine vinagre and oliveoil, seasonned to yout tast!

My DCs love having it in their lunchbox.

Gorionine, that one sounds tasty. Ta for the tip about tomato going soggy overnight, I'll put them in on the morning or make it on the morning in that case.
