I am ashamed to say this here, as my ds's are 11, 13 and 15, but I can't remember ever having baked treats for them to have when they got in from school.

However, last week, I finally felt like a proper mummy, when they came in from school, all cold and tired, and were able to have home-made lentil and bacon soup as a warming snack.

How do you weigh syrup though? Or is a tablespoon equivalent to a weight?

to weigh syrup put the tin on the scales and take it out until you have removed the amount you want. Helps if you dip the spoon in hot water first, slides off easier.

Aha, I've just found out that 1 tablespoon equal 1oz or 25g

If you're not the world's best baker (that'd be me, then), those part-baked bread rolls are good. Fill the house with the smell of baking bread - but no baking involved .

here is my mum's mine:

1 ½ ounces of hard margarine

1 large tablespoon of golden syrup

1 ounce of cocoa and a few bits of cooking chocolate

2 tablespoons of dessicated coconut

Oats

Wholemeal flour

Gently melt the margarine and syrup in a saucepan (don't let it boil).

When liquid stir in the cocoa and melt in the cooking chocolate.

Add the coconut.

Take the pan off the heat.

Add spoonfuls of flour and oats together, stirring in each time, until you can form balls with the mixture (not too sticky but not too dry either).

Scoop out with a spoon, and form into balls (or just lumps!) on a plate.

Delicious eaten warm or cold.

Buy some popping corn (£2 for a very large bag form supermarket) Pop it as they come in the door. It's cheap, healthy and fun.
