Thanks, Littlerach, they look fab. I only have an ancient recipe from my trusty M&S recipe book and I am not sure if it is ok.

If you have a Costco near you, I would heartily recommend you get a box of their brownie mix. It makes the best brownies ever

No Costco, as we live in Switzerland.

What kind of chocolate should I use? We have a milk chocolate Lindt santa left from Christmas. Can I use that?

Are the brownies better if I use good quality chocolate or is cooking chocolate ok?

I use noraml choc, not cooking.

Guess choc santa is same as normal!!

Always use plain choc for cooking - I prefer 50% cocoa solids.

Milk choc is mostly sugar (bleurgh)

Lindt Santa (no relation) is only 30% choc. I also have a bar of cooking choc, it says on it 40% choc. But I need to get vanilla essence so will be going to the shops anyway.

These are snowflecked but you can make the choc drops plain.

I say 50% because most snobby recipes say 70% at least but personally I find that a bit too dark (and I like plain choc).

Anything less than 50% is a total nono IMHO
