I am going to help a group of children make a healthy meal tomorrow- please give me your recipe ideas!

I am planning on working with a group of around 10-12 11-14 year olds tomorrow night and am going to 'teach' them how to make a healthy meal. Any ideas? It is to feed all of them plus a couple of adults and the only equipment we have is a very small budget, 2 rings on a hob, very small temperamental oven and a microwave. And about 90 minutes to prepare, cook and eat!
Any ideas? I did think of something pasta-y or risotto style but would welcome some ideas.

spag bol with lots of added veg? (carrots, caurgettes, peppers, mushrooms)

Chilli and rice with veg added again

Chicken Paprika with tomatoes, onions, peppers and garlic, served with pasta

Shepherd's pie with added veg

Moroccan vegetable tagine with couscous (The couscous just needs to be soaked in hot water so easy with limited hob space

Stir-fried chicken, vegetables and ric or noodles

or a couscous salad with warm cooked vegetables added like mushrooms, sweet potato, butternut squash, onions etc and mixed with raw salad too like peppers, cucumber, raisins, with a cinnamon lemon olive oil and honey dressing?

tomato and courgette risotto.

Cooked in the pan, chicken stock, garlic, onion, basil, and grated parmesan.

Serve with fresh crusty bread and green salad.

Pizzas are good if you buy ready-made (thin) bases or use pitta breads for the bases. Get them to make the tomato sauce (onion, garlic, tin of tomatoes) and prepare lots of healthy toppings - could include mushrooms, peppers, olives, broccoli, tuna, sweetcorn, onions, maybe cooked chicken - and some grated cheese - then design the pizza combinations (could even make this into a fun contest).

Kids usually like pizza and it can be healthy if you make it at home, so they find that encouraging.

Fab, than you. I doubt any of them are very experimental- in fact from past experience they're pretty fussy- but I'm sre one of these will work

Pizzas also good for fusspots as they can design their own and no one has to have a topping they don't like.

Stir fried veg with rice noodles - the noodles just need a 3 min soak in boiling water, and you can do whatever veg you fancy.

Has the advantage that you can see the individual veg and the prep involves everyone, plus chance to sample the veggies raw

pizzas might not be a good idea with one tiny oven and a big group of kids.

muffin pizza

toast half a muffin
add tomato puree
ham
mozzerella
anything else youd like

spag bol
vegetable curry
soup
stuffed peppers
a basic stew - chicken, beef, whatever
fishcakes

I've done pizza loads with dierent groups and it is a bit of a faff- good for smaller groups but not this size! I always end up buying loads of toppings and they all end up with just cheese and maybe a bit of ham anyway. Would like to do something a bit different but not too 'weird' that the ywon't eat it!

A good tomatoey base sauce with veg whizzed into it or finely chopped, and then show them how to use it for pasta, top some muffins/pittas with it for mini pizzas, mix with mince and spices for a chilli, etc.
