I am struggling with new ideas, I always seem to do the usual, omelettes, pasta, rice dishes and we are all bored to tears with them.
My two are 3 and 1 1/2 and I particularly want to make sure I incorporate more veg into all of our diets and stear away from sandwiches for lunch. We all prefer mediteranean ?veg rather than traditional, and any ideas how to keep lots in without it going off so quickly which always seems to happen and I end up chucking loads away.

Any ideas greatfully received.

what about vegetable soup for lunch and toast?

Firstly there's nothing wrong with frozen veg. And there's a lot you can do with random old veg so you use it before it goes off.

I second the idea to make veg soup - just cook off some onions, add aforementioned random veg and a stokc cube, cook for unspecified period then whizz and eat .

What about roasted veg with potato wedges? My 18m DS loves dipping, so having that with sour cream or salsa or whatever is a meal in itself. Lentil daal? Roll out a sheet of ready-made pastry and top with veg for a tart type thing. Add lentils to everything you ever make. Baked potatoes with a selection of toppings - kidney beans, sweetcorn, tuna, salad. Crudites and dips. Hummus and ricecakes or oatcakes with cheese and tomato. Bean stews, spicy and warming in winter.

Mmmmmm I'm hungry now!

For lunch my boys have a picnicy/buffet kind of thing.

I will fill a plate with a combination of,

Fruit
Raw Veg
Cheese
Ham
Finger Sandwiches
A small amount of plain crisps
A small cake or biscuit
Rice Salad
Boiled Eggs
Cocktail Sausages.

They eat it all and i mix the stuff up so the get a variety.

Also for lunch my ds's favorite thing is a pot of Hommous (sp?) with raw veg sticks and torn up pitta bread/crusty bread

I would also second (or third) soup, it can be made with any combo of veg and served with a nice chunk of crust bread.

Very good if you have a slow cooker as you can bung it on in the morning on low and forget about it, it freezes well to i have a freezer full of soup!
