I'm on a diet and want to cook healthy meals for dinners instead of the regulars we normally have like carbonara. Can I have some ideas please

Fish - baked or grilled salmon, fishcakes made up with potato herbs etc and baked in the oven
Grilled chicken, steamed vegetables
brown rice
tomata/vege based pastas
lean cuts of meat grilled
salads
chick pea curry with brown rice

Vegetable curry
Prawn stirfry
Salmon/ white fish with baby potatoes and veg
Pasta with veg and tomato sauce
Morrocan couscous with chickpeas and veg

Really, avoid creamy dishes, bulk meals up with veg, avoid too much red meat, add spices to make things tasty without fat in them. Easier said than done I know. Good luck.

I have problems as sh doesnt like fish, (doesnt mind a bit of white fish occassionally) and he hates things like lentils, chick peas and salads.

home made soups and broths can be healthy and filling - leek, root vegtables, lentils and stock

we have a tuna pasta that uses only a small amount of creme fraiche mixed with the tuna and lots of veg

What about a stew? Or a roast with plenty of veg?

choosyfloosy · 16/01/2009 17:42

try making a pasta sauce, basically just like bolognese but use diced aubergine instead, and put it into a lasagne form (without the white sauce, but grate cheese onto dc's half). for some reason ds will eat this without complaining, whereas lentils etc he will struggle with.

Easiest approach with dieting with a family is to eat tiny portions rather than wholesale switchover of food. But I'd agree it's good to enlarge range of options.

Banana - if you are doing fishcakes in the oven, do you still coat them with breadcrumbs? Do they get crispy and tasty on the outside?

blametheparents · 16/01/2009 17:59

Made Thai turkey burgers last night. Recipe here. Was delicious and low in fat.

bananapaddlepop · 16/01/2009 18:29

oh yes oh bling, i make them up, put them in fridge for 30 mins or so, dip in beaten egg, breadcrumbs and then spray with that low fat olive oil spray. They are yummy, albeit in a low fat way..

Agree with pasta with tomato-based sauces (can add other stuff e.g. mushrooms, peppers etc).

Stir fries (chicken, fish)

Roast meat, but with boiled potatoes/veg

Casseroles, e.g. chicken and bacon casserole with onions and mushrooms in.
