what to add to salmon/rice to make it tasty

normally buy these salmon fillets coated with chilli flakes and chop up to serve with rice and spring onions and soya beans (yummy).
Got some plain salmon to cook this time, it needs eating today - what can I add to make it tasty or give a bit of a kick?
any quick ideas appreciated as may need to go to tescos before school run!

I normally wrap them in foil with a dollop of creme freiche and some chopped chives

BAke in the oven for however long it says

Teriyake sauce or marinade - I usually coat the salmon in the marinade and griddle it, then add some teryiake sauce into the rice. You've just reminded me that I forgot to take the salmon out of the freezer ... oh well, Fish on Friday!

courgettes, sauteed in garlic, butter and a teensy bit of salt.

if you want to make it rich then add lemon, a small handfull of mozarella and a splash of milk.

for extra falvor add 1/4 teaspoon of tumeric, and some grated onions.

I add about a tspn of green pesto to each fillet before cooking in the oven. I don't wrap it, just bake it in the oven for 15-20 min.

My DDs favourite is parmessan and pesto on the top and baked. Yum.

Teriyaki sauce (comes in a bottle)

Finly chopped ginger, soya sauce, a little honey, sesame oil, mix together and use as a marinade. Then either wrap in foil with marinade and bake, or grill or fry and boil up the marinade to serve on the side as a sauce.

Poach the salmon first then serve with sweet chili sauce mixed with lime juice and rice and salad

Bread crumbs with lemon juice, zest & herbs-pref fresh, parsley, so it goes into a dry paste (iykwim?) not too soggy, with herbs, then baked.

Cook them in foil with lemon/lime juice and butter. Serve with new potatoes and green beans. Or put some chopped chillies with the lime juice and serve with rice or noodles.

How was it?

I'm still getting over a virus so I bought a fish pie from Waitrose to save cooking. I served it with savoy cabbage finely shredded and stir-fried in a little olive oil with cumin seeds. I always add a little water part way through frying and let it boil off otherwise the cabbage starts to burn before it softens.

I bake with brown sugar/olive oil/soy paste - just coat it in that and bake, left over sauce is nice on the rice if you're having that too.

it was delicious - could have done with a bit more kick as I like a bit of spice, but it worked a treat... thanks.
