Freezing fresh herbs - does it work?

I'm sick and tired of having leftover herbs. Why are they always sold in such humungous bunches when all is required is a tablespoon of basil, etc.

Anyway, I have sweet basil, corainder, parsley, mint in my fridge - can I freeze them for later use?

i don't think they'd take well to freezing

good tip for basil-bung it in a glass of water and with any luck some of it should grow roots and you can plant it in a little pot....

Yes, I would. Chop them first and you can add them straight from the freezer. Not 100% as good as fresh but a sight better than dried stuff.

Mint and parsley freeze well - don't bother defrosting before chucking them in whatever you are cooking.

Not sure about basil or coriander

I think the harder herbs freeze better, I always have rosemary and thyme in the freezer - works really well. And you don't even need to chop the thyme then, just wiggle the bag and the leaves come off and you can put them in.

I'm told you can chop softer herbs very finely, then you can scrape off what you want. I've never done it though.

I usually freeze them all but don't defrost before use and don't use as garnish either.
