I think I might have made the best ever shepherd's pie! I will be able to confirm this in an hour or so when I eat it, but it's looking good.

Usually, we only ever have cottage pie with minced beef, but in response to a special request from DD's visiting schoolfriend, I have made it with lamb... and it would seem to be sooooo much better.

I usually make it with lamb... but tonight I've made it with beef! it is smelling gorgeous!

Unctious is a great word alright. And used to describe a good shepherds pie...well, I'll get me coat and be right round knife and fork in me pocket

I am impressed that a visiting tea guest has requested lamb. How sophiticated. It's fish fingers or pasta when we have a tea visitor chez Tsar.

I do always make my shepherds pie with lamb though. Well that is a shepherds pie rather than cottage though isn't it? This confused me for years.

Yes - because shepherds wouldn't have anything to do with cows, I suppose.

I forgot to buy bread whiles picking up DC's so for tea we are having,,,,,, crackers as I can't be arsed to go out again. I expect you will soon all be able to hear the "what.. JUST CRACKERS" from where you all are. Am about a shepherds pie. I will write out 1000 "I am a bad mother".

Rich and slurpy and hits all the spots when you take a mouthful. Think a pork belly stew (my latest unctious dish) or thick creamy chocolate pudding of some kind

And, FWIW, it really was the best shepherd's pie I've ever eaten, in the world, ever. It is my favourite and my best.

Well, it was a bit 'George's Marvellous Medicine', to be honest, Molesworth, which is a chiz because I have little chance of recreating it. But it was as follows:

1lb lamb mince
1 big onion & 1 little one, very very finely diced as dd is onion-phobic.
1 clove garlic, crushed
1 large carrot, diced
1 tbsp plain flour
1 generous pinch cinnamon
1 generous pinch dried mixed herbs
a good shake of Worcestershire sauce
a generous blob of tomato ketchup (in absence of tomato puree!)
1/2 pt beef stock
salt & pepper to taste

Mash made with 900g Sainsbury's ordinary white potatoes, butter, bit of full fat milk.

Brown the lamb in the bottom of a heavy pan. Then tip the lamb into a colander for all the fat to drain off. Add 1tbsp oil to the pan and cook the onions, garlic & carrot gently over a moderate heat until the onions are translucent. Return the lamb to the pan, stir through onion etc. Sprinkle over the flour, cinnamon & herbs, and add Worcs. sauce and ketchup. Pour over hot beef stock, stir well, cover and bring up to boiling point. Turn down to a very low simmer and leave until it's cooked (which in my case was long enough to peel & cook the potatoes, however long that is). Check seasoning & put it in whichever dish you're going to use, and top with mashed potato.

I made mine in the morning and then put it in the oven for the children's meal at 5pm... from larder cold it took about 30 minutes at 180 degrees (although I do have a pretty fast fan oven).

Must say though that I set out to make this MN version but realised we didn't have any red wine in the house (how can this be??) so had to improvise.

Thanks MHB - my efforts often result in something either too dry or too watery (chiz chiz) rather than something unctuous, so I'll give yours a go
