Can I cook fairy cakes with plain flour???

Help! I promised my toddler we'd cook fairy cakes after her nap (she's asleep now) but just realised I have only plain flour - no self-raising! Is it possible to cook them with plain flour???

Could I add bicarb or baking powder to compensate?

Yes, SR flour is just plain flour with baking powder added to it.

Just use more baking powder than you would normally.

for the purposes of entertaining your toddler, then yes, I would concur with castille.

Generally speaking, no, I wouldn't recommend it. Although most muffin recipes call for plain rather than s/r so plans can always be reworked hastily!

well we went for it and the nigella recipe i found on MN worked fantastically - despite cooking with a toddler, they were the best buns/muffins i ever made!!! nigella rocks.

thanks for your help mnetters - the baking powder worked a treat.
