Ideas for ultra-easy meals for first weeks with a newborn

I'd rather not rely on ready meals and takeaways more than we have to so I am looking for seriously quick things to make in those early weeks - 10 mins prepartion, minimal chopping and ingredients, stuff I can do one handed, or that even non-cooking DH can't mess up!

So far I have come up with:

  • Pasta twirls with shop bought sauce and add some veg
  • Smoked mackerel fillets with jacket potatoes and salad
  • Salmon fillets smeared with pesto and baked in oven, with couscous and peas

Any other ideas? Ideally stuff that DD (2 yrs) can eat too to save me cooking twice!

Dafodilly- am due in 8 days, and I have found the best way to cook stuff for the freezer is to make double amounts when I'm cooking dinner. I have filled the freezer with:
Chilli con carne
Spag bol
cheese sauce for pasta
shepherds pie
cottage pie
soup
chicken casserole
beef stew
Chicken curry
Tuna pasta bake

By doing it this way, it hasn't really been any extra work, and hopefully will save a lot of effort once baby is here.
I also got a few 'easy cook' type things such as a chicken pie, potato gratin, etc from M&S just for when we forget to get something out of the freezer (bound to happen )

I have a good stock of frozen veg too- making things like stir fry easy to do- and I got microwave rice (uncle bens) to accompany things, and easy cook noodles (amoy).
Eggs are a great fall back too, and we have a really good selection of takeaways near us
Pasta with veg and pesto is really quick to do, and very tasty.

Of course, this depends on how fussy your dd is too. If she only has some foods that she will eat- is it worth just making ahead and freezing some of those- say 2 weeks worth- just so you don't worry about feeding her? At least it will take a little of the strain off.

as well as freezing meals before hand, i relied on sandwiches, cereal bars, fruit and yogurts. Sometimes you don't want a big meal anyway, especially in the first few days. And it saves on dishes!
