Urgent help required for beetroot chocolate brownies

I'm halfway through Hugh's recipe for beetroot chocolate brownies, and I've just realised that my baking trays aren't 3c deep as required, they're only about 1cm deep. Should i make them thinner, or could i put them in cake cases? Would they spill everywhere?
Help, please!!!

Do you have a large cake tin you could use? Square or round.

I'd put them in cake cases.

Brownies are generally done when the surface cracks, and a skewer stuck in the middle comes out a bit mucky.

Sent dh back out for last egg as soon as he came in the door.
Did brownies in cake cases, they look heavenly, and smell better. Taste test shortly.

Must remember that... sounds odd at first sight but no stranger than carrot cake. With the added fun of the possibility of pink pee if you eat enough!

OK, they taste fab. Really scrummy.
Only problemm is some of them have sunk a lot in the middle. Any ideas? Is it because my oven was too hot? (Have a (lovely) gas non-fan-assisted oven, so there's a temperature gradient in there, and knowing exactly what temp is where is a bit of an art form).
