It's that time of year and we're keen for easy, tasty low fat recipes. Our two standards are grilled trout or steamed chicken (with herbs and chilli) then popped under the grill for a minute with a sliver of feta cheese. Served with veggies.

Soup obviously also a popular choice.

All other ideas gratefully received.

veggie sausage casserole - add a tin of pinto beans to really pad it out

salmon in a bag - salmon steaks with loads of veggies, squeeze of lemon, olive oil and a drizzle of water (pack into a foil parcel) and bake in the oven

Any veg chopped and boiled in 2 tins of tomatoe and stock with black pepper then liquidised - Also add butter beans or other pulses and for a bit of spice wooster sauce or chilli.

Tuscan Bean Stew.

Good couple of handfuls of dried beans (any will do) pre soaked.

1 good sized celery stalk chopped finely
1 red onion chopped finely
2 good sized cloves of garlic chopped finely
either 1 whole punnet of tomatoes or 1 400g
1 large carrot grated
tin of chopped toms.
squidge of tom paste
3 bay leaves
handful of chopped basil and oregano. (you can use dried if you don't have fresh.)
slug of red wine if wanted.
Half cup of lentils. (red or puy)
Salt and pepper to taste
1 small red chill chopped and deseeded if you want a bit of a kick.

Method;

Saute onions gently until transparent.
Add celery and continue to saute until slightly coloured
Add garlic and saute for another minute.
Throw in red wine to deglaze pan
Throw mixture into either a slow cooker or a casserole with a lid.
Add everything else apart from the lentils.
If using casserole dish leave in oven on 160 for 2-3 hrs.
Add lentils 20 mins before serving with a green side salad and crusty bread if wanted.
If using slow cooker leave on high for 5-6 hrs.
Add lentils 15 mins before serving.

You can add coarse chunks of sausage to this or chopped bacon with the fat cut off as well. Simply add to pan when sauteing the onions.
You can also add tiny pasta shapes as well.

If you must have cake, limit it to just one day a week and have swissroll with low-fat jam, it's fat free.

Thanks everyone. The veggie chilli in particular sounds quick and easy. Bean stew sounds great - but a little too long for when I've just got home from work! . I'll keep that for a weekend.

Chickpea tagine - soften onions in tiny bit of olive oil, add 1 tablespoon cumin & 1 tablespoon cinnamon, whoosh around with the onions for 30 secs or so, then add a tin of chickpeas, a tin of tomatoes, a cinnamon stick and a handful of suktanas (or chopped, dried apricots if you prefer), bring to the boil and simmer for 30 min. Serve with cous cous or rice & salada, or on it's own. Cheap as chips as well.

Teriyaki salmon - marinate for 30 mins in a teaspoon of brown sugar or honey, soy sauce, garlic and some diced fresh chilli if you like it hot. Grill and serve with steamed greens (Asian greens like pak choi are good) and egg noodles.

Lemon chicken with roasted garlic - takes about 30 minutes total. Stick it with rice or potato wedges

Chicken fajitas - quick, easy and healthy (providing you don't go crazy with sour cream and guacamole !)

Salmon wrapped in parma ham with herby spinach lentils is another favourite. Let me know if you want the recipe

trout/salmon (or any other fish really) cooked in the oven with lots of garlic and herbs. Add a few black olives if you fancy. Or thinly sliced onions. Ready in 15/20 mins max.

Tilly - please pass the salmon recipe on. We are a little bored of our salmon options so something new will be good. The lentil curry thing is brilliant - DP loves lentils.

Chicken with CREME FRAICHE

chicken breasts in oven with seasoning and a whole punnet of cherry tomatoes, sliced peppers (any other veg you can think of ie courgettes, mushrooms, aubergines) and garlic cloves

Bake for 40mins

Remove from oven and place chicken on plate.

Add half tub of WEIGHTWATCHERS VERY LOW FAT CREME FRAICHE and stir through tomatoe-y sauce til warm. Place chicken back in tin and serve with rice or just veggies

THIS IS A FANTASTIC DISH AND SO VERSATILE AND SO QUICK AND SOOOOOOOOOOOO EASY

Blend lean mince with small chopped onion, handful fresh coriander, 1 tsp cumin 2 tsp mixed spice and salt if wanted
Blend in blender
Form into small meatballs
Fry in scant olive oil
Serve with pita or wrap and salad plus non fat Greek yoghurt whizzed with fresh mint and garlic
Or mint sauce in low fat yoghurt if no fresh stuff handy
Tis a staple in our house

Pork fillet
120gms per adult
Divide into 3 portions. Keep fillet whole(don't slice thin)
Mix with 1tbsp soy sauce, 2Tbsp maple syrup and chopped rosemary.
Pan fry on high heat colouring all over
Finish in oven
Add slosh apple juice to pan once pork in oven to make bit of jus/sauce, pour over pork when serving
Yum with new potatoes and. Green beans or broccoli

Wrap a salmon fillet in 2 slices of parma ham. Season, drizzle with olive oil and bake in the oven (about 10 mins)

Meanwhile, drain a tin of puy lentils and heat in a saucepan. Add juice of one lemon, couple of lugs of olive oil, s & p and fresh herbs (anything will do but basil, coriander & mint is my usual combo). Add a bag of spinach and warm all together until spinach and herbs are wilted and lentils are warmed through.

Serve with blob of (half fat) creme fraiche. Its really tasty and is done in 10-15 mins

this is a gorgeous chicken and lentil curry recipe. Not especially quick but I normally make double quantities at the weekend and just warm through on a week night. It is really tasty
