I do a sausage and bean stew with rice in. It's lovely. I just brown the sausages, chuck any herbs/spices and veg in, some tinned toms and stock and simmer for a while.

Bean Salad

You can use any combination of beans.

Ingredients
1 can cannellini beans, rinsed and drained
1 can kidney beans, rinsed and drained
1 can garbanzo beans, rinsed and drained
2 celery stalks, chopped fine
1/2 red onion, chopped fine
1 cup fresh, finely chopped flat-leaf parsley
1 Tbsp fresh finely chopped rosemary
1/3 cup apple cider vinegar
1/3 cup granulated sugar
1/4 cup olive oil
1 1/2 teaspoons salt
1/4 teaspoon black pepper

Method
1 In a large bowl, mix the beans, celery, onion, parsley and rosemary.
2 In a separate small bowl, whisk together the vinegar, sugar, olive oil, salt, and pepper. Add the dressing to the beans. Toss to coat.
3 Chill beans in the refrigerator for several hours, to allow the beans to soak up the flavor of the dressing.

Serves 4 to 8.

I've got a recipe for spicy bean loaf which uses a tin of kidney beans and a tin of brown lentils. Would you be interested?

Thanks for thr replies, all sounds great. Its DD who loves kidney beans but I am stuck for thinsg to make. She loves hummous so the variation of that would be great, sausage casserole-y thing is another favourite so can just put some kidney beans in that, bean salad fantastic and yes I would be very interested in spicy bean loaf OSOTC, do you think that would be any good to make and freeze in slices to take out for a packed lunch or does it need to be served hot?

Variation on CharChar's recipe.

1.Brown some sausages or bacon in frying pan
2.Add chopped onion and brown
3.Add 1 tin of baked beans
4.Add 1 tin of chopped tomatoes
5.Add 1 small tin of kidney beans
6.Bubble for 10 mins
7.Serve with rice or pasta or crusty bread

My whole family lurrrrve this dinner. Might have it today in fact!

Spicy bean and lentil loaf

1 onion finely chopped
1 garlic close crushed
2 sticks celery finely chopped
400g can kidney beans
400g can lentils
1 egg
1 carrot coarsely grated
50g grated cheddar
50g wholemeal breadcrumbs
1 tbsp tom purée
1 tbsp tom ketchup
1 tsp ground cumin, ground coriander, chili powder
salt and pepper

Gently cook the onion, garlic and celery in some olive oil for about 5 mins.
Rinse and drain beans, whizz in a food processor with the onion mixture and egg until smooth
Transfer to a bowl and add all the remaining ingredients and seaon.
Spoon into greased loaf tin and bake for 1 hr

Serve hot or cold in slices.

Choc pecan brownies:

1 can (410g) white or red kidney or black beans, drained and rinsed
120ml (4fl oz) skimmed milk
2 eggs
50g (1 2/3 oz) soft non-hydrogenated marg, melted
1 tbsp vanilla essence
sweetener equiv to 180g (6oz) sugar
60g (2oz) wholemeal flour
60g (2oz) unsweetened cocoa powder
1 tsp baking powder
pinch salt
75g (2 ½ oz) chopped toasted pecans

  1. In food processor, puree the beans until coarse. Add milk, eggs, marg, vanilla and puree until smooth, scraping down the sides a few times. Set it aside.
  1. In a large bowl, combine sweetener, flour, cocoa, baking powder and salt. Pour bean mixture over flour mixture. Stir to combine. Scrape the mixture into a greaseproof paper lined 20cm (8inch) square baking tin, smoothing the top. Sprinkle with pecans.
  1. Bake in a 180 degree (gas mark 4) oven for approx 18 mins or until a skewer inserted into the centre comes out clean. Allow to cool on a rack.

I forgot to say it's Gas 5 for the bean loaf.
