anyone for quinoa?

I've just discovered a big, unopened box of quinoa at the back of my cupboard. I really like quinoa (and according to 'Dr' Joyless McKeith it's jolly healthy) but I only ever eat it out and so don't have any great ideas for what to do with it at home. Any suggestions?

Quinoa with Pesto and Roast Tomatoes (from the Food Doctor Diet)

2 medium tomatoes
2 sprigs fresh rosemary
For the pesto - 1 large handful fresh basil, 100ml olive oil,100g pine nuts, 1 small clove garlic
50g quinoa
100ml water with 1/2 tsp of bouillon powder added

Pre-heat oven to 200C 400F or gas 6
Put tomatoes and rosemary in baking dish, drizzle with olive oil and roast for 20 mins (I usually leave in for 40 mins). Meanwhile blend pesto ingredients in processor. Simmer quinoa and water in pan until soft, stir in 3tsps pesto and serve with tomatoes - remove rosemary sprigs first.

i bake a butternut squash, fry onions, garlic, add some ginger and mix with cooked quinoa and eat for a healthy lunch sometimes. My dds like it too.

Are you veggie?

I cook it in chicken stock and then add it to stir fried chicken, mushrooms, asparagus, peas, or whatever you have lurking in the fridge!

My mindees mum is from Peru and she told me to mix it with some cheese and something else.

I couldn't remember what the something else was, so we had it last night with cheese and sweetcorn, along with meatballs and a pepper/tomato sauce.

we make a quinoa thing in the slow cooker, cooked in stock with (frozen chunks of) butternut squash and (fresh chunks of) beetroot - just before serving stir in cubes of feta

Thanks everyone - had some tonight with cubes of sweet potato and cubes of beetroot, and a bit of onion.... was OK but not earthshattering. Will look forward to the chilli recipe.

ok veg chilli w quinoa

i med onion
2 garlic cloves
1 green pepper, seeded

all of above finely chopped

1 liter water

1 large can whole plum tomatoes 800g

i tbsp mild paprika
1 tbsp cumin
1/2 tsp turmeric
1/2 tsp dried oregano
400g tin kidney beans - ideally no sugar/salt - drained and rinsed
2 tbsp olive oil
100g quinoa rinsed and cooked.

heat oil in pan - when hot not smoking add onion garlic and green pepper. reduce heat to medium and cook until onion becomes translucent - about 9 mins. add half the water, tomatoes, spices and oregano. bring to a boil, cook for about 30 mins - careful it doesn't dry out. add more water if nec.

then add rest of water, kidney beans and cooked quinoa. bring to boil again and reduce heat to simmer. cook partially covered until quinoa tender and a little spiral on outside of grain has separated - about 15 mins. season to taste and serve w yoghurt and maybe some chives.

to cook quinoa: place in 500ml water and bring to boil. reduce heat to medium cover partially so steam escapes and cook at slow boil for about 12 mins - until grains doubled in size and crack open so spiral germ is visible. sit for 1 min,

delish. enough here for 4-6 baby servings - but i found enough to have for 2 adults and 1 toddler with jacket potatoes.

got to say not sure about length of time cooking quinoa - seems more than on packet (got M+S stuff) - what do you think?

might delete this after a day as think illegal to copy out of book!

I make salad with 50% quinoa and 50% puy lentils. Add a very finely chopped onion (red ideally), some dressing and then whatever you have in the fridge that's nice and salady. Toasted nuts and seeds, herbs, chopped celery, peppers ... whatever.

will give that pesto one a whirl too extreme - ds goes nuts for pesto

hoping someone likes mine too after the bloody half hour it took to type (slow typer)!

Yours look good luvaduck - I don't like chilli but having looked at your recipe again it doesn't seem to have anything too hot in it so will give that a go.

I usually have it cold. Cook it until if is soft (not squishy though) then mix with sweetcorn, chopped peppers, mint, corriander, parsley, lemon juice, red onion or spring onions.

Love the stuff as so full of iron, magnesium, protein... My favourite (cos easy) is to roast some veg - put mix of say onion, fennel, aubergine, courgette in roasting tin with bags olive oil. Wait till fairly soft and then add red wine and eg cannellini beans - back in oven for blast through. Roast some tomatoes separately in olive oil and garlic (put garlic in above one too)with cumin sprinkled over top. Cook quinoa - sizzle for few mins in butter/olive oil in pan, add some white wine and when simmered for few mins, add stock and cook til done.
Mash the tomatoes up with the garlic and add to the roast veg. Serve with the quinoa and glass or two of red wine. Yummy.
Oh - also read that quinoa has traces of arsenic in it so important to rinse it well first - before cooking.
