Wanted...idiots guide to bread makers!! Please help!!

My 11mth old DD is severely intolerant to all dairy and soy products so this means she can't have bread as it has soy flour in it

I have a bread maker gathering dust never used Is it possible to make my own bread without soy flour in it?

If so how do I start?

A RL friend told me you can buy all the ingredients in a pack ready to bung in machine...is it as simple as this?

So if the recipe asks for powdered milk & I don't put it in, do I put in anything else instead?

No need to put in powdered milk or to put in anything to substitute for it.

For fat you can use butter, margarine/Flora or oil such as sunflower or olive oil. I think that the fat is there to stop the loaf from drying out too quickly, it isn't necessary if the loaf is eaten straight away.

if you put more salt it will keep longer. not MUCH more salt, just a little. i really noticed it with a milk loaf i made this week and forgot salt, it dried out really fast and it is quite a soft bread.

1tbs of yeast will make up to about 8 loaves so 1tsp is plenty.

aviatrix do you use machine? i use mixer or by hand so cannot help you with recipes simpson.

So basically I just need to buy yeast and bread flour as I have everything else!!

Get that machine down, Simpson, and tell us the make and model - quite likely someone will have the same and be able to give you recommended recipe (obv. adjusted to be non-dairy - no basic recipes ever have soy anyhow).

Really, so long as you remember the yeast and have the correct proportions of bread flour and water, the rest doesn't make a vast
amount of difference.

Ok have got it down!!

It's a Morphy Richards but I can't see a number on it

Also no book with it

But it makes cakes too

Do you reckon I can get a dairy/soy free cake recipe for it?

simpson there are loads of cakes which use oil instead of butter, usually the fruity ones.

aviatrix what sort of french bread? i love making bread but baguettes is nemesis. am happier with sourdough rustic jobs.

i'm only using sachets because I had them to use up. I'll definitely be buying a tub of yeast when they run out. i also left out the milk powder because the recipe book couldn't give a good reason to add it.

We bought a little packet of yeast today in the supermarket, rather than the sachets. Will work out much cheaper. DH made a loaf this morning and used half the amount of yeast and tepid water.

Oooh I wonder when the mixing ends. Our old breadmaker used to beep but this one doesn't. I might just try it - I'll try putting them in after, say, an hour - the whole thing takes 3hr 45mins. Or is that too late do you think?
