Sausage Casserole Recipe please

Made the mistake of asking my godson what he'd like to eat when he comes for tea tonight and this was the answer. Sounds stupid but I've never made it so is there a standard recipe for it? Want to make sure I serve up something he's expecting rather than my own interpretation! Many Thanks!

This is dh's:

Fry off sausages and place in a casserole with sliced onions, carrots and mushrooms - add stock/gravy to cover and put in the oven for a few hours til veg are soft. You could also put dumplings on top. Yummy.

Crikey, we do at least 3 different types depending on what's in the fridge!

  1. Fry off sausages and onions, add chopped carrot, parsnip and/or suede. turn down v low for 20 mins (add a little water if you have to) to let the veg soften and sweeten. Then add tin of tomatoes and some stock to cover (squirt of ketchup can also help). In the oven on 200 (gas mark 5-6) for 40 mins.
  1. Fry off sausages, onions and a few chopped slices of bacon. Add a couple of handfuls of puy lentils (the browny green ones) and then either a tin od beef consomme soup or beef stock. Bring to the boil and then in the oven for 40 mins. YOu can stir in a bit o creme fraiche at the end if you like.

Actually the second one doesn't sound like one that a small boy would be used to! Although my 1 year olds love it served with red cabbage!

I make it like this:
Lightly grill the sausages
Chop an onion quite finely
Put sausages, onion, a tin of baked beans, a tin of tomatoes and a decent slug of mixed herbs in a large casserole.
Cook in the oven for at least 45 mins if you want the sauce to be thicker cook for longer.

It's great served with jacket spuds, chips, crusty bread etc.

I've had it serveral different ways tho and they've all been delicious!

Thanks for all the suggestions - will see what's in the cupboard/fridge and hope for the best! Amused me no end when I e mailed his Mum asking how she usually does it and she's not aware that he's ever had it in his life so hopefully I can't go too wrong!

My dd (3) loves this version from the dinnerlady recipe book .

18 thin sausages

2 tins chopped toms

1 chopped onion

pinch of mixed herbs

1 teaspoon of water

Cut each sausage into three pieces ,add to ovenproof dish with some olive oil and the onions cook for 15 mins.

Pour over toms add herbs and water cook for 45 mins.

Serve with mash .

She devours it and is a very fussy eater .

Sausage Pie

Cut sausages into thirds (I tend to use chipolata sausages as you get more in a pack).

Put a little oil in the bottom of a casserole dish, put the sausages in and stick in the oven for about 20 ish mins until they are almost cooked and turning brown but not quite done.

While sausages are in the oven: boil some potatoes (peel them before you put the sausages in) - enough so that when you mash them, they would give a good topping to your casserole dish).

Once the potatoes are on, fry a chopped up onion and some finely chopped garlic until onions are soft. Use a big pan rather than a frying pan. Then stick a can of tinned tomatoes and a can of baked beans in with the onions and garlic. Add a good squirt of tomato puree (I normally add about third of a tube). Give it a good sprinkle of mixed herbs. Let it mulch down while the potatoes and sausages are cooking.

Then: stick tomatoey mix in with the sausages. MAsh the potatoes and stick the potatoes on top.

Put in oven for about half an hour. Add some grated cheese on top for the last 5 mins if you want.

No precooking in my recipe:

6 sausages
125g pack of diced pancetta
mushrooms
small onion
tin chopped tomatoes
tin baked beans

Mix up the chopped onion, sliced mushrooms, pancetta, beans and about 2/3 of the tomatoes in an ovenproof dish; put sausages on top (pushed in so about half covered in mixture). Put in oven at 180 for an hour, turning the sausages half way through.

Serve with mashed potatoes and green beans.

Serves 2 adults and 2 children (8 and 6).

Hannahsaunt - I often don't pre-cook the sausages either ... my Mum says you should as it stops the casserole from being too greasy but it can make the skins on the sausages go a bit tough and I prefer them soft in a casserole.

These all sound so tasty!! Might have to try that sausage pie variation

Ooh we're having sausage casserole tonight too - using up the mini sausage we got for Xmas dinner that I froze but I will be using this recipe:

Brown sausages
Open jar of Knorr Sausages Tonight (Red wine & onion variety)
Put sausages & sauce into slow cooker
Serve when DH eventually gets home from working tonight
