Help! DH home alone for 2 weeks whilst I'm away....ideas for easy meals for DH & DS

I'm going away for two weeks for work. I'm thrilled to be escaping but also filled with dread at the mayhem I may leave behind! I'm sure he'll cope brilliantly, but it will be DH's first time to cope single handedly so I would like to try and ease the blow with some easy recipes that he can handle whilst feeling potentially overwhelemed - frazzled - happy - depressed........
He won't have ready meals from any well known supermarkets so I'll have to do the prepared stuff.

Help! Suggestions welcome!

Also, if he eats baked beans, they are his friend now. You can teach him to jazz them up with bacon/onion/chorizo/tomatoe etc.

I'm really sorry to go on - but isn't it a wonderful opportunity for him to show your ds that real men not only clear gutters and take the bins out but also cook fabulous meals without female assistance?

god some people have such opinions dont they

i dont blame you and i would be doing it more for ds than dh to know he was eating proper stuff

things like stew, spag bol, soups, chicken curry, chilli con carne, pasta bakes, casseroles, make own chicken nuggets and freeze them, sausage casserole.

good on you what wife or partner wouldnt think about this please

it is so a 2 way thing.

I would do exactly the same as you, Swisscheese.

Here's an easy recipe;

Cook 3-4oz of macaroni/pasta
mix together 1 egg, 150mls milk, 4tblsp grated cheddar.

Put pasta in a dish, pour the mixture over the pasta, sprinkle some cheese on top.

Cook at 190c for about 20 mins. Serve with steamed veg.

(I use those steam fresh ones too for when I'm short of time/can't be bothered)

For a quick easy pizza, you can top a pitta with some nice pasta sauce (seeds of change do a good one), sprinkle some frozen veg and just top with grated cheese. Grill.

Fill a pitta with omellette/scrambled eggs/fish fingers

Hmmm I would like to think DH would fill up the freezer with yummy things for me when going away and to be honest he probably would-he's a much better cook albeit weekend only-I cook during the week as get home earlier and it has to be fairly foolproof stuff -I hate having to stop to look at a recipe whilst also getting kids to bed. Some great things he's made recently which have frozen really well are a black bean chilli, classic bolognese and a chicken korma (from Indian food made easy think recipe is on BBC food website) very mild and DS (3) had it happily with chicken shredded and mixed in with rice.
I've recently frozen chicken coq au vin(Nigella) and beef stew (Jamie) which both came out well-DS will eat both if meat chopped up and mixed with pasta or rice.
We also make our own tomato and veg sauce for pasta, and pesto and freeze. we always have good quality sausages in the fridge for a once a week sausages and mash/home made chips standby (payoff-DS has to have broccoli with it) and home made salmon 'nuggets' for DS coated in egg and crushed cornflakes freeze well too.
A roast is really easy to put together for a Sunday and most children love it-leftovers use for risotto.
Stir fries (use Ken Hom's recipes), grilled tuna or salmon with a salsa (mango or pineapple spring onions chilli lime juice and ginger fry for 10 mins)and Thai curry (using ready made paste) are other week night staples but haven't managed to persuade DS to enjoy any of these sadly and I'm guessing you want food both of them can have together?? The other thing I'd say is leave him a cook book suitable for a novice (Jamies dinners is great) with a few strategic post it notes and you never know he might surprise you.....
DH would definitely turn his nose up and refuse to eat macaroni cheese sausage casserole baked potatoes toasted sandwiches beans on toast etc however so that is the downside of him being a good cook!
