Pasta sauces that don't involve loads of tomatoes?

Anyone any ideas for pasta sauces for someone who doesn't like anything 'too tomatoey' (his word) and only eats cheese if it's very disguised.
If it helps, the awkward cuss eats his school dinner spag bol but won't touch mine. Apparently, the school dinner one is much less tomatoey. I've tried and tried to tone down the tomatoes with no success.
I'm so fed up having to cook separately for him when the rest of us love our pasta.

carbonara? pesto? (parmesan hidden in both)
roasted veg (just veg. with oil)? salmon with creme fraiche?

OhBling · 05/01/2009 17:19

Pesto.

Bacon, mushroom and cream (I always use creme fraiche, not cream). Add chopped courgetts/broccoli/onion as required.

We used to often just have bacon with olive oil and a splash of milk. But perhaps too boring?

Bacon, spinach and capers with lemon zest and a spoon of creme fraiche.

For Spaghetti bol with less tomatoe, try a) using more tomatoe (I'm sure you already do that! . b) cook for as long as possible so that tomotoe disintegrates and c) throw in copious amounts of beef stock (or even bisto - gasp) so that the colour is reduced to a less red one!

Pasta bakes? With a cheesy sauce that he probably won't notice?

Good luck!

Sorry! "less tomatoe". Clearly. Duh!

You might be able to find a recipe or two here.

Have you tried adding some cream to the sauce? That makes it look less red (obv) and also mellows the sharpness of the tomatoes.

If you use tinned toms in your spag bol try whizzing them up first. DP is fussy and says he doesn't like tinned toms but is always happy if they have been whizzed and he can't see the lumps.

we just had bacon, red pepper and creme fraiche. I do all sorts of variants to this with chicken etc

OhBling · 05/01/2009 17:28

Yes, that's a good suggestion from PurpleFlower. I have a friend who doesn't mind the taste of tomatoes, but can't abide the look or feel of them. So a stew that's been cooked for 4 hours and is just a red mess is fine, but bolognaise with even a hint of tomatoe skin has him practically retching at the table.

I blend the sauce for DH too for spag bol as he doesn't like tomatoes (or onions, or peppers, or mushrooms or most things remotly healthy)

Also, try adding a bit of sugar to it if you don't already. I always wondered why domio tasted so good but it is so dull of sugar!

Creamed tomatoes or passata don't contain any skins (but costs more obviously)

I do a tuna pasta meal - olive oil, butter, tuna, lemon and parsley.

Mushrooms cooked in garlic and butter, add grated cheese after you mix with pasta.

Leeks, mushrooms, white wine and cream

Gorgonzola and baby spinach leaves

Ham and cheese sauce

Herb and garlic cream cheese (nicked that off Thomcat!)

Fry up mushrooms (if he'll eat them; my two won't) then add a tub of garlic and herb philly and a bit of milk plus lots of black pepper and cook gently until it's all melty and lovely.

Roast some vege - then stir into pasta with a tub of red pesto.

I will happily eat passata but tinned tomatoes make me shudder.
