spinach and ricotta / feta type mini pies for a 13mth old - anyone got a recipe please?

I have got a 100g bag of baby spinach leaves and a 13mth old that will only eat finger food! Anyone got an easy recipe for a filo pastry type thing that I can use the spinach in with either ricotta or feta? And could they be frozen? thanks

Mmmm, spanakopita! My DS oves these - this isn't exactly the recipe I use but very close.

I was about to suggest spanakopita too! Even I can make that and i'm a rubbish cook...Mind you looking at that recipe on the link mine are way more basic than that, I just cook the spinach and ricotta and put some nutmeg in and put them in the filo pastry and fry them.

bluebump - what is your recipe - the spana one looks delish but a bit more hassle than I can handle - thanks but sorry bluestocking! Can you oven cook them too? And freeze them?

I take a tub of ricotta (usually from Morrisons so whatever size it comes in) and heat it up, in another pan just put some spinach in and let it wilt a bit in the heat then put them in the same pan for a bit longer. I then add a bit of nutmeg (not fresh grated or anything), some salt and pepper and that's it.

I then take two sheets of filo pastry and put a bit of mixture in and attempt to fold it into triangles, usually give up and go for squares.

Fry them in a touch of olive oil until they are a goldeny brown colour - making sure to turn them over lots and attempting to fry the sides otherwise they can taste a bit doughy.

I am a terrible cook hence i have no recipe but I do cook these alot, they are probably a bit blander than bluestockings ones as my mum does hers like that recipe and they are very nice but mine taste ok to me too.

you can do mini quiche type things without pastry. mix ricotta, spinach and egg and cook in a bun tray that has been smeared with butter. bit of nutmeg and pepper works well. lots less hassle than anything involving pastry
